It will have cracks in it, turns yellow to brown, smells bad. My rule of thumb is that if I have had it over 6 mos it gets tossed. I have shortening that is rancid. It can really run your stomach and if not worth the risk.

Shortening will last a long time stored in a cool, dry place......You can tell by the way it looks & the smell.....

if you open that can of shortening and is all dry and cracked at the surface, I pretty much say it is way too old !!!
*** also it will smell and taste rancid ***

At or near the end of shelf life, always sniff the container – discard if any odd (rancid) odor is detected.

You know it's over the hill when it tastes off. It'll have a stale unpleasant taste, may even smell stale.

I used to use shortening on my son until he turned 12 then I started using vaseline.
