I want to know if the carrot would change size? If it is smooth, rough, or if the texture is the same?

If you let it in there for almost 1 month you can use it later to prepare food. Be careful to put your salty solution and the carrots in a sterilized jar and cover it. Just unsalt it before, by keeping the carot in clear water. After that you can mix it into soups or mashed potatoes,

You would have a salty carrot. Leave it in there long enough and you have a sorta pickled carrot.

If you added beef,onions and stock cubes....a nice stew. The carrot would get eaten with it

It becomes crunchier. Chinese chefs always recommend us to soak our vegetables in salt water before frying. The vegetables will be crunchier and retain their juices longer.
