I just returned from a trip overseas, and developed a slight cough while on the return flight. Since it was very dry on the plane, I assumed that was the cause. Now I also have minor laryngitis but no pain. Has this ever happened to anyone?

it is possible that you developed a cough, but being at that altitude I don't think would have anything to do with it. At 30,000 feet you are actually feeling about the 10,000 foot level. And with the pressure being controlled you will probably feel a little above sea level. Fresh air returns to the cabin about each 3 to 4 minutes. If you get a chance next time look at the air vents just above the window seat and you will see nicotine stains on the vents. If you cough is dry I would not worry so much about it right now. However; if you get congestion I would see my Dr. or an ENT..
