The best way to keep lettuce crisp is to rinse it clean and let most of the water drip from it (or use a salad spinner). Then when you put it in an air-tight container add a damp paper towel to cover it. Then refridgerate it.

This is also a way to keep certain vegetables crisp and fresh too (like celery and radishes).

When I do this at home it keeps the lettuce fresh and crisp for 2 or 3 days.

When I brign a salad to work I keep the cheese and other wet ingredients (dressings) and dry ingredients (croutons, sunflower seeds) in separate ziploc baggies and just have lettuce and vegies in the ziploc container with a small wet paper towel covering them. Then I combine everything at work and voila...a nice fresh crisp salad!!!

Keeping it as cold as possible is key. Buy some of those little ice packs for the time before you go to lunch. Also, don't add the dressing until the last minute; store it in a seperate container rather than putting it on before you leave the house.

put the lettice in a seperate container, the other salad ingredients in another as well as the dressing. Combine when you are ready to eat. Keep the lettice as cold as you can without adding moisture.

Get an insulated bag and a couple ice packs. I used to do this.
