My dad is a diabetic and for a snack he usually eats fruits, veggies, organic cereal/granola bars. You can also try dried fruit, nuts, a salad, some raisins, prunes, dates, sorbet (not too often), or even soup.

Cheese is good, but not too much it's high in fat. All vegetables are good.
