Sauerkraut is finely sliced white cabbage fermented by various lactic acid bacteria. It is a common and traditional ingredient in german cuisine, alsatian french cuisine, and romanian cuisine.
It is an extremely healthy food and is excellent source of vitamin c. However, the low pH and overabundance of lactobacilli can easily upset the stomach of people who are not used to eating raw sauerkraut.

basically all sauerkraut is made of is shredded cabbage and
salt packed in a crock. flavorings can be added such as
white wine, champagne etc. any good cookbook will feature a
recipe. joy of cooking is one of them, or look on the internet.

properly made in a stone ware crock the cabbage is sliced, blanched, brined and fermented in the crock for a good week or so. some like to add juniper berries or white wine like reisling to the brine and it smells of gin. I like it heated up with some boiled potatoes or pierogies and kielbassa. Most people think it is sick
