Main ingredients: 2 cups of Cooked lentils, drained; 1 Onion, 1 carrots, 1 stalk celery,1 sm apple

Grind these together in a food processor. Add the spices and taste as you go. You are not using meat, so you can do that. One good thing is you can adjust your ingredients as you go.

Primary Spices: Sage, thyme, rosemary, salt and pepper

If you want a smoky flavor, Use Liquid Smoke sparingly. See webpage below.

Pinch of any these to taste depending on what you want. Don't use them all. :-)

Red pepper, ginger, clove, nutmeg, cumin

Welsh Glamorgan Vegetarian Sausages

This is a classic Welsh recipe, often affectionately called a "Poor Man's Sausage" because of the lack of meat. If you cannot buy Caerphilly or Lancashire cheese you could substitute a strong Cheddar cheese.
150 g grated caerphilly cheese or lancashire cheese
125 g fresh white breadcrumbs
2 tablespoons finely chopped leeks or spring onions
3 egg yolks
1 tablespoon parsley, chopped
1/2 teaspoon thyme (optional)
1 teaspoon prepared English mustard (you could sub powdered mustard)
salt, to taste
pepper, to taste
For Frying
1 egg white
1 cup breadcrumbs
oil or lard


This is easiest to make in a food processor, although you can mix by hand if you prefer.
Mix the cheese, breadcrumbs and leek or spring onion in the processor.
Whisk the yolks, herbs, mustard and seasoning together.
Add to the breadcrumb and cheese mixture and whizz again in the food processor.
The mixture should be quite moist and come together easily in your hand but if not add another yolk or a touch of water.
Divide into 10-12 pieces and roll each into a sausage about 5 cm long.
You can make them ahead to this point and store in the fridge for up to a day.
Dip in egg white, roll in the extra breadcrumbs and fry until golden brown in hot oil or lard.
Serve with potatoes or, for a lighter meal, with perhaps some grilled tomato and a salad.
You may also like to fry a few rashers of bacon to serve on the side.

The main problem is getting the consistency right or you end up with... sticky veggie goo.

Firstly, it depends on your budget, what vegetables can you use?

if your going mainstream veggies then go with the following...

2 tablespoons vegetable oil, plus
1additional vegetable oil, for pan-frying
1 sweet potato, grated
1 onion, chopped
2 tablespoons cornflour
1 large mushroom
1 teaspoon dried sage
1 teaspoon dried thyme
1/4 teaspoon ground nutmeg
1/3 teaspoon ground pepper
2 teaspoons soy sauce
salt, to taste if you don't have small uns.

The just simply mis all ingrediants except the potatoe, you have to squeese the excess juices between two plates to avoid a runny mess, if you think it's heading that way then just add an egg to the mix.

Roll into sausage shape and viola, violin, vio-whatever.

One of the hard things about being vegetarian is meat eaters are just so determined to harrass you. And they get so gross about it. It's hard to eat, and not have the right to be left alone about it. That's in spite of the fact many people in their 40s and 50s are learning to eat one or two vegetarian meals a day with their family to avoid cancer, and adding some soy to their diet everyday as well.

I have personally only eaten the sausage available in the refrigerated section of Kroger's or a healthfood store. But I know that The Farm Cookbook has a make it from scratch recipe. Also, if you don't make tofu from scratch, which is quite a project, and use the ground up soy beans, as in their recipe, you can just buy TVP at a healthfood store, soak it, and substitute this. Yum, yum, yum; and so healthy. Great eaten pan-fried, but also great added to all kinds of dishes.

You can get textured soy protein, flavor it with herbs and pepper and salt; malt extract gives a meaty flavor. I'm not sure what the herbs are, but I'm think thyme is one.
You could look for a normal sausage recipe and substitute soy protein for ground meat.
If you live in the United States, there is an excellent product made by Morningstar Farms (California) called Breakfast Patties. You can barely tell the difference from the real thing. I wish I could get it here.

i have a lovely recipe . i had never tried red kidney beans b4 and usually hate new things but these were lovely! hope u enjoy them if you do use the recipe

beany sausages - serves 4

410g kidney beans in water, drained
6 spring onions
salt n freshly grounded black pepper
1-2 tp mixed dried herbs
5oz/142g carrots
some oil for pan

for the sauce...

1/2pt . 284ml passatta
1tbsp malt vingear
dash of tabasco sauce
1/2tsp salt
1tb artifical sweetner
1tbsp worcestershire sauce

1- place beans in a food processor or blender. trim and roughly chop spring onions. add to the beans along with plenty of seasoning and mixed herbs. blend until smooth

2- peel and gate the carrots and stir into mixture. divide into 8 portions and form into sausage shapes

3- heat a non stick frying pan until hot and put on some oil. add sausages and cook, turn frequently for 10 mins until browned all over

4- meanwhile make the tomato sauce. place passata, vingear , worchestershire sauce, tabasco sauce, salt and sweetner into a bowl and mix well to form a smooth sauce. heat for 2-3 mins stirring continuously until hot

5- serve with mashed potatoes and vegetables

Why do you want your food sausage shaped. Is that not the point of being a veggie - like do you really want to be reminded where it all comes from. And why veggie steaks? I have always said that if you were hungry you would eat anything justlike all of us who have been broke have had to do. Now shape that and eat it

Sosmix (the best veggie sausage in the world) is just flavoured TVP. Personally, I can't recommend the Sosmix highly enough. Sosmix and egg burgers with ketchup are deeeelish.
