My mother used to make a delicious oven rice pudding dish but alas I never did get the recipe from her.

Rice pudding is so easy you really don't need a recipe. Butter an oven proof dish. put in large tablespoonful pudding rice (not long grain), add tablespoonful sugar (I like soft brown for caramel type taste but you can use any sugar). Add however many raisins you want. Pour in milk to more than cover - up to 1 pint. Add a knob of butter on top and grated nutmeg. Put in oven (approx 180 degrees) for at least 45 minutes depending on how wet you want it. I like it nearly dry with beautiful brown skin on top. Sounds like you may want it creamier - try it and see - you can always taste it and put it back in the oven!

Rice Banana Raisin Pudding

Ingredients



2 cups Rice, brown
4 cups Water
2 cups Raisins
1 cup Dates, pitted
4 Bananas, large, ripe
2 Tbsp. Cornstarch
2 tsp. Cinnamon, ground (plus a few sprinkles for top)

Preparation

Begin by placing the water in a 2-1/2 qt. pot with a cover on the stovetop. Bring Water to a boil on at “high” setting. Add the brown Rice and stir. When the water begins to boil, stir again and cover. Lower the heat to simmer. Do not stir again. The Rice should be done in about 20-30 minutes.

Meanwhile, put the Dates, Bananas, and Cornstarch in a high-speed blender. Cover with the lid and run blender at high speed until the contents are creamy-smooth. Then pour into a mixing bowl if you want to bake the pudding, as in the photos. If you wish to prepare a soft and creamy version of this recipe, see the instructions below.*

When the Rice is finished cooking, add it to the Banana-Date mixture in the mixing bowl. Add the Raisins and the Cinnamon and mix together.


Scoop out into a 9-inch X 13-inch baking dish. Dust surface of pudding with a few sprinkles of ground Cinnamon. If using a glass baking dish, you can cook the pudding in a microwave oven at “high” setting for about 10 to 15 minutes. If using a conventional oven, bake at 350 degrees F. for about 20 to 30 minutes. Stop baking if the pudding surface begins to show “cracks.

Remove from oven, cut into squares or scoop into dessert bowls, and enjoy!

*If you desire a soft creamy version of this recipe, when the rice is finished cooking add the banana and date blend and the other ingredients to the rice in the pot and mix thoroughly while simmering on the stovetop. When the pudding thickens, remove from the heat, cover, and let stand for about 20 minutes before serving hot, or it may be cooled and refrigerated if you desire to serve cold. Enjoy!

I have a recipe at home for rice pudding, but it cooks for several hours on the stove and has to be stirred a lot...I'm really desirous now to try it in the oven and see if I can adapt it!!

oh, and I've never heard of having rice pudding with raisins/prunes....prunes personally sound better but I'd jsut never heard of either!!

I'll make the pudding tonight (needed to use up some milk anyway) and let you know how it went.....

Well, I didn't have a chance to make my recipe but the bottom two sound phenomenal.... here's my regular one though just for the record!!

2.5 cups milk
1 cup half/half cream
1/2 to 3/4 cup sugar (depends on how sweet you like!)
mix all ingredients and put into large saucepan. Heat to simmering and cook for 1.5 hours on low heat. Stir every 10-15 minutes. Once done can be enjoyed with a sprinkle of colored sugar (child favorite!) sprinke of cinnamon or nutmeg, or however you like to eat pudding!

I am definately going to try it with prunes next time!!

get some pudding rice and raisins from the supermarket and more milk and a little cream
fill an oven proof dish with rice halfway up add a handful of raisins and 4/5spoons of sugar and fill to brim with milk (add some cinnamon aswell if you like or use splenda instead of sugar)
pop in oven at about 150gas 4 after about 30mins take out and stir and put back and leave for another 30mins(keep checking to make sure doesnt burn) and enjoy

Take a half pound of rice and steep it in new milk a whole night and in the morning drain it and let the milk drop away; then take the best, sweetest and thickest creme and put the rice into it and boil it a little; and set it to cool an hour or two and after, put in the yolks of half a dozen eggs, a little pepper, cloves, mace, currants, dates, sugar and salt; and having mixed them well together, put in a great store of beef suet well beaten and small shred boil as before and serve

Modern recipe:

1 lb. rice
1 quart water
1/2 pint heavy cream
1/4 lb. shredded beef suet
1/8 lb. each raisins, currants, and dates
1/4 tsp. each pepper, cloves, mace, & salt
3 egg yolks, well beaten
sugar & cinnamon
Bring salted water to boil in a heavy pot. Add cream, rice and suet. Cover pot with tight fitting lid and let cook, simmering, until rice begins to be tender (about half an hour). Stir once; add raisins, dates & currants. Add spices. Add egg yolks; stir well into liquid mixture. Cook until well done; garnish with a little sugar & cinnamon.

Nana’s Rice Pudding

2/3 cup of minute rice ( I have used already cooked also)
2 ¾ cups of Milk
1/3 cup of sugar
½ teaspoon of salt
1/3 cup raisins (optional)

In sauce pan combine above ingredients, stir frequently, reduce heat simmer for 10 minutes, stirring occasionally.

2 slightly beaten eggs
1 teaspoon of vanilla
½ teaspoon of nutmeg

In one quart casserole combine above ingredients, then combine Rice mixture slowly, so eggs don’t cook. Place casserole in pan of hot water
(hot water bath). Bake at 375 degrees for 20 to 30 minutes, or until center is set.

Cool 1 hour before serving.

Take three cups of cooked rice add one half can of sweetened condensed milk ,cinnamon,nutmeg vanilla and raisins to taste,heat on med heat for 10mins,stirring so it doesn,t stick,serve warm or cold.
