I read somewhere that fish can be cooked from frozen, however i leave it out to defrost first. I tried pan fried cod today and it just crumbled, this happened before as well when I tried to make coconut fish curry. What can I do to prevent the fish from crumbling?

Frozen fish should be cooked in an icy state before it starts to drip. The cooking method has to be changed slightly. It has to be cooked for a longer period of time at a lower temperature.

Poaching is also good for all kinds of fish. While poaching fish, it is cooked in a seasoned liquid jus below boiling point. Fish can also be steamed. Another excellent method is baking. All types of fish can be cooked by the baking method. The fish can be baked in the oven, either whole, filleted or as steaks. Whole fish when baked turns out to be excellent. The fish can be baked both dry and in liquid.

Froxen cod like most frozen fish is much better if you cook it while it is frozen, do not thaw it. Pan frying should be done by cooking the cod while it is frozen. Fry at medium heat, uncovered and do not turn it over more then once or twice .
