rice, boneless skinless chicken breast. i also have vegetables and many different spices and sauces....but i want to know a good way to prepare it

A healthy quick dish I like is:

The amounts are approximate, as I usually eye-ball as I go.

Chicken Bruschetta

4 boneless, skinless chicken breasts
Zesty Italian dressing
4 Roma Tomatoes, seeded and diced
2 cloves garlic, minced
fresh basil (or spinach) leaves, chopped/torn (about 1-2 cups)
mozzarella cheese, cubed
1/4 - 1/2 cup red onion, diced

Marinate chicken breasts in Italian dressing for about 3 hours in the fridge.

Mix tomatoes, garlic, basil or spinach, red onions, mozzarella, and Italian dressing.

On an indoor or outdoor grill, grill chicken breasts 4-5 minutes on each side, or until done. Slice chicken breasts and top with tomato mixture.

Stir a little extra of the tomato mixture into or over the rice & serve with steamed/buttered brocolli -- or Fetuccinne Alfredo/ pasta of choice. If you have enough fresh basil and pine nuts, make pesto and serve the pesto over the rice or pasta.

Here's a recipe that I came up with and found to be absolutely delicious. Dice the chicken into pieces roughly 1/2" to 3/4" cubed and cook in a sauce of honey, minced or powdered garlic, and teriyaki sauce (use just enough so that when the sauce is boiling the bubbles completely cover the chicken. In a separate pan, dice and fry up the veggies (I have used things like broccoli, sugar snap pea pods, or an "oriental veggie mix") with soy sauce and olive oil. (And garlic, if you want. I've done with or without) Stir both the chicken and the veggies regularly. Once both are started, cook rice to serve over (I think brown rice tastes better, but white works too). When both the chicken and the veggies are done, drain the liquid from both into the same saucepan and add some flour or corn starch to thicken the sauce, but taste it first, and if you want add some seasoning or some additional soy sauce. I like to put the chicken on top of the veggies and rice, but leave the sauce on the side because my wife doesn't always want it. I find that the sweetness f the chicken compliments the taste of the soy sauce in the veggies well. Also, I have not done so yet, but I have been considering adding some seasonings to the rice while it cooks, maybe some saffron or something. If you try that, please let me know how well it works.

I would make it with basil cream and mushroom sauce.
Take 1/2 can cream of mushroom soup,(all if you have 4 chickenbreasts)
2 chicken breasts
6-8 oz sliced mushrooms.
1/2 cup white wine, (or chicken broth)
1 bay leaf
1 tsp dried basil or 1 tbs fresh
pepper
red pepper
1/2 small onion
salt to taste

Saute chicken in a little olive oil, about 5 minutes
Take out of pan, add chopped onions, cook 2-3 mins.
Add sliced mushrooms. cook 2-3 mins more.
Add basil, salt, pepper, dried red papper, bay leaf, cook 1 min
Add soup and wine or broth.
cook about five min. Taste, adding soy sauce or worcestershire,
or any spices you think you;d like.
Add chicken back into pan, and cook about 10
or 15 minutes more.
Serve over white rice.

You can simply add cream later, if you don;t like the campbells standby, but i have to admit i like it.

do a stirfry with a simple sauce: 1 1/2 cups orange juice, 2 tbl of soy sauce, 1/2 tsp garlic powder, 1 tsp ground ginger, 1tbl of corn starch....blend together, set aside

cut chicken into small pieces and brown in 1 tbl oil. set aside
cut up vegetables and saute in 1 tbl oil until tender, add chicken and sauce back to pan and cook about 10-15 minutes or until suace is thick add a little salt and pepper if you like

serve over rice

Try this:


Chicken Scallopini

4 half chicken breasts
1/4 c. all-purpose flour
1 1/2 tsp. garlic salt
1/4 tsp. paprika
1/4 c. butter
3 tbsp. water
1 tbsp. lemon juice
1/4 tsp. instant chicken bouillon
4 thin lemon slices, optional

Remove skin and bones from chicken breasts. Mix flour, garlic salt and paprika. Coat chicken with flour mixture. Brown chicken in butter in 10 inch skillet. Remove chicken and place in baking dish. Stir water, lemon juice and bouillon into skillet, loosening cooked particles on bottom.

Heat on low for 1 minute, add to chicken in baking dish. Bake approximately 30 minutes at 350 degrees. Remove from oven and add lemon slices to chicken if desired.

What veggies do you have.....You could dice the chicked start cooking...when all the outside is brown add in the mixed veggies(like broc. fresh beans, peppers, onion, peas, carrots). Also add some soy sauce....heat until veggies are soft and then serve ove the rice....simple and easy....

cook the rice

cut the chicken breast into strips and marinate it in some of the spices or one of our sauces.

Stir fry the chicken add some sliced veggies and serve it over the rice.
