It really depends on what you like, how much time you want to spend, and how involved you like to get in cooking. If you like stir-fry, here's a recipe I posted earlier today to answer someone else's question, using boneless skinless chicken and broccoli and/or "Asian" veggies:
Here's a recipe that I came up with and found to be absolutely delicious. Dice the chicken into pieces roughly 1/2" to 3/4" cubed and cook in a sauce of honey, minced or powdered garlic, and teriyaki sauce (use just enough so that when the sauce is boiling the bubbles completely cover the chicken. In a separate pan, dice and fry up the veggies (I have used things like broccoli, sugar snap pea pods, or an "oriental veggie mix") with soy sauce and olive oil. (And garlic, if you want. I've done with or without) Stir both the chicken and the veggies regularly. Once both are started, cook rice to serve over (I think brown rice tastes better, but white works too). When both the chicken and the veggies are done, drain the liquid from both into the same saucepan and add some flour or corn starch to thicken the sauce, but taste it first, and if you want add some seasoning or some additional soy sauce. I like to put the chicken on top of the veggies and rice, but leave the sauce on the side because my wife doesn't always want it. I find that the sweetness f the chicken compliments the taste of the soy sauce in the veggies well. Also, I have not done so yet, but I have been considering adding some seasonings to the rice while it cooks, maybe some saffron or something. If you try that, please let me know how well it works.
Otherwise, I love making homemade pizza, crust and all. I've found that using some or all whole wheat flour for the dough adds a pleasant flavor and texture to the pizza.
For something quicker, prepare some noodles (whatever kind you like), brown some ground beef (stir it as it browns so that the pieces are small), and simmer a can of cream of whatever you like condensed soup with milk (half of a can usually works) to make a sauce. Mix the sauce with the ground beef and serve over the noodles. I find that cream of mushroom works well, but that's just what I like.
If you're really in a hurry, mac&cheese is always filling, and you can add things like browned ground beef , diced ham, or diced broccoli to jazz it up a little.

Try this recipe. It's delicious.
1 bag of penne pasta
diced boneless, skinless chicken
2 tablespoons olive oil
2 zucchinnis, sliced into thin strips
2 squashes, sliced into thin strips
1 carrot, thinly sliced or shredded
1/2 cup lemon juice
2 tablespoons of black pepper
salt to taste
1. Bring water to a boil. Add pasta. It should cook in about ten minutes. Drain the pasta and leave it aside.
2. While you do that, take out a saucepan, and heat the olive oil. Add the diced chicken and cook until white. Add just a tablespoon of your lemon juice.
3. Add the vegetables to the chicken, and stir like a stir fry. Add the rest of the lemon juice and the black pepper and let it simmer for a couple minutes.
4. Turn off the stove.
5. Add the vegetables and the chicken to the drained pasta.
6. Enjoy!

On those nights we always fix a spinach salad with leftover chicken on top. Add a light dressing of oil and vinegar and then jazz it up with whatever u happen to have in the fridge/pantry (mushrooms, pine nuts, strawberries, etc.) enjoy!

I love nights that are easy. We do Fruit and cheese, and crackers of choice.For more protein, maybe slice some summer sausage to add to the mix .
