Basic yellow mustard--not necessary. Specialty mustards may require it because of ingredient differences. Most people do it out of habit and because they don't use it very quickly.

Mold may be introduced to the containers after opening. Refrigeration does not kill bacteria and microorganisms, but does slow the growth. Refrigerated, mustard can be kept for up 1 year.

Mustard dries faster then catsup and refridgeration slows the process but if stored too long it will spoil.
