This is a hard question considering everyone has a different taste for cheese. Some like it mild and some like it strong and sharp. I personally do not have a favorite. However I think the most disgusting cheese is Limburger cheese, I have no clue how people can eat that.

So if I had to choose a favorite it would be Havarti. It is smooth and creamy and has a delightful flavor. I love it in a turkey sandwich on a croissant with avocado.

Another great one that I love on water crackers is Irish Chedder. It is a white chedder and it has a great flavor as well. Its about a medium sharpness.

If you live in the Bay Area take a trip to Point Reyes to the cheese factory....or take a trip to Piazza's Fine Foods in San Mateo to their cheese bar. There is a lady there that knows everything there is to know about cheese.

For what purpose? Velveeta is the best kind of cheese for SOME purposes, but who would want to eat it? At least by itself. . .
But to give you an answer, there's a reason why parmesan has the words "Parmesano REGGIANO" stamped on the rind. It is the king of cheeses. No others really come close, once you've gotten used to eating it sliced at room temperature. Enjoy it.

Farmers cheese! It is the best. I usually find it at the farmers market or at the health food stores.

I love old cheddar for straight up eating.
Feta is my fav for topping things with!
