I am a college student and can't have an oven or toaster. Or Toaster oven. I eat easy mac every other day between meals, and I really need something new to snack on. My freezer is very small, so preferably something that doesnt demand a lot of fridge space.

When I was in college, I became semi-famous on my dorm floor because of my microwave burritos. I would take one flour tortilla, spread refried beans over the entire tortilla, sprinkle shredded cheese and Taco Bell hot sauce on top, then put a second tortilla on top. Cut it into slices and eat like pizza.

You can also make quesadillas in the microwave for a quick snack. Super Pretzels are good, but they do take up kind of a lot of space in a small freezer.

If you have a Trader Joe's or Wild Oats around, they've got some neat snacky foods, like mini eggrolls.

How about non-cooked foods for snacks? Cereal, chips and salsa, nuts, granola, granola bars, yogurt, etc. all make good, relatively healthy snacks.

For a healthful and delicious snack, try "baked apples." Use large apples, preferably Rome, wash them well, (do not peel). cut out the core, pour some water or juice (even soda works) into the cored out hole. Sprinkle with cinnamon and if you like, push some raisins into the opening. Nuke for about 8 minutes until skin is wrinkly and inside is soft. Delicious plain or with whipped topping or ice cream.

good for a light snack: Take Triscuits, pepperoni, and a brick of cheddar cheese or velveeta. Place triscuits on a plate, cut a square piece of cheese for each cracker. Put a piece of pepperoni on top. I also like to put a piece of a bananna pepper or some salsa sauce on top of them. Anyways put them in the microwave for 35 seconds for about 12-15 crackers.

Why don't you try food that don't need to be microwaved, like turkey wraps.
Deli meat (turkey)
Cream cheese
lettuce
tomato
pickles
flour tortillas

Spread cream cheese on the tortilla, then lay out the rest layering it evenly. Then roll it up and slice.
This take up no room in your fridge and it is fast to make. You can use any items you like in this wrap. And you can take it to go.

They now make all kinds of 'shelf' stuff for microwaves like soups & ravoli in thier own little containers. Or get a bag of Tortillia chips and some velveeta cheese...melt over chips....yum!

I usually make these for lunch but you can have them as a snack. Enjoy!

Kidney Beans


1 can red kidney beans
1 can chopped tomatoes or equivalent amount of fresh tomatos
salt (only if using fresh tomatoes)
1/2 cup chopped parsley
8 Shitake mushrooms, sliced into thin strips

Load into microwaive container in layers following order of ingredients.
Mix before cooking. Nuke for 3 minutes at high or until hot.

(Curried Rice and Peas)

Pre-cook 1 cup of Basmati rice and put into plastic lunch box.
Add 1-2 cups of frozen peas.
Sprinkle generously with curry powder. I use about 2 teaspoons.
Salt if desired.

At work, stir, then nuke for 5 minutes.


Here is another one of my Microwave lunches:

At home, pre-cook one to two cups of corn pasta. (I
discovered it in my local HFS). Note, that corn pasta
needs to cook longer and with more water than regular
pasta. Put pasta into lunch container.

Add: 1-2 cups of chopped Roma tomatoes and spices,
especially salt and pepper, oregano, parsley,
and chives or green onions. (You can use canned
tomatoes instead of fresh ones).

Add: as many chopped mushrooms as you want. I usually
do 6-12, depending on my mood for the day.
Zucchini and Corn Curry
========================

4-8 small zucchini in 1/2 inch slices (leave peel on)
1/4 - 1/2 pound frozen corn kernels (1/4 - 1/2 bag)
curry powder of your choice (I use 1-2 teaspoons)
salt (optional)

Fill a microwave container with the zucchini. Top of with corn. There
should be more zucchini than corn. Generously sprinkle with curry
powder. Add some salt, if you like. Before cooking, mix thoroughly.
Microwave on high for about 8 minutes.
