It will last about 4 days. My mom makes a potato salad just like that and she leaves it no longer than 4 days in the fridge

I got food poisoning from potato salad that was 4 days old and refridgerated. I now only make potato salad and keep it in the fridge for up to 2-3 days. Hope this helps.

Cheers,

Our local radio station had an expert (i guess there are experts on this) talk about this a couple months ago. She confimed what others have already said, leftovers are good in the fridge for 4 days.

I keep it for about 4-5 days, sounds good got a recipe, can you e-mail me? jfurlerbaby23@yahoo.com. As long as it's refrigerated(mayo), it might even be good for a week or so but if it tastes funny toss it.
