I have four "signature" dishes:
1) Steak Theodore: Filet Mignon, wrapped in bacon, crab meat on top, covered in Hollandaise sauce.
2) Chicken Cordon Bleu: Breaded chicken breasts stuffed with provolone, and Canadian bacon.
3) Eggs Benedict
4) Deep fried cheese stuffed ravioli with 3 different types of dipping sauce...pesto, marinara and dried tomato and garlic.
I think the reason I call them my "signature" dishes is that I've probably prepared them literally thousands of times over the last 20 years.

Mostly I only cook puddings since thats what I'm best at
I do however make a nice lemon chicken
just cover the chicken in olive oil and lemon pepper and bake it
its super easy and super yummy

My best meal is teriyaki chicken (w/ pineapple), sauteed baby potatoes (w/ butter and seasoning salt), and a totally yummy caesar salad.
Believe it or not, I make incredible scrambled eggs w/ cheddar cheese, a tuna salad to die for, the best chili ever, and totally yummy soups too!
I don't really like to cook, but when I make the effort, it's surprisingly good :)

I make the best Apple Pecan Cheesecake. Its delicious. If you want to try it here is the recipe. It's from kraftfoods.com
1-1/2 cups HONEY MAID Graham Cracker Crumbs
1/4 cup butter, melted
2 Tbsp. brown sugar
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1-1/2 cups firmly packed brown sugar, divided
1 tsp. vanilla
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
4 eggs
4 cups chopped peeled apples (about 3 medium)
3/4 cup PLANTERS Chopped Pecans
1 tsp. ground cinnamon
PREHEAT oven to 325°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. Mix crumbs, butter and 2 Tbsp. brown sugar; press firmly onto bottom of pan.
BEAT cream cheese, 1 cup of the brown sugar and the vanilla in large bowl with electric mixer on medium speed until well blended. Add sour cream; mix well. Add eggs, one at a time, mixing on low speed after each addition just until blended. Pour over crust. Mix remaining 1/2 cup brown sugar, the apples, pecans and cinnamon; spoon evenly over cheesecake batter.
BAKE 55 min. or until center is almost set. Cool. Refrigerate 4 hours or overnight. Let stand at room temperature 30 min. before serving. Lift cheesecake from pan, using foil handles. Cut into 16 pieces. Store leftover cheesecake in refrigerator.

well all my friends love my mac and cheese, or should I say cheese with some macaroni in it. Make a cheese paste and then add the macaroni cooked and then put in some shredded cheese and mix up, i like it before i put it in the oven, but some like it after its been in the oven for 30 minutes.
