My stepmother informed me this morning that she no longer eats any carbs. I am making a leek soup as a main course, and I normally bake a loaf of bread with soup. What can I serve instead? Or should I just bake the bread and tell her to live with it?

Thought I should add... this isn't a low carb diet, she claims she has some sort of infection that feeds on carbs. Or something.

Why don't you try a salad? I use this one but you can use anyone. Hope this helps the pears add a nice flavour with vegetable soups. Cheers,

Spinach and Pear Salad
for two
3 Cups fresh spinach leaves, torn into bite-size pieces
2 pretty leaves butter or romaine lettuce
1 medium comice (or anything in season) pear, peeled, cored
and cut in 1/2 inch dice
1/3 Cup pomegranate seeds
1/8 tsp cracked black pepper
3 Tbsp balsamic vinegar, or less if you can afford good balsamic
(or raspberry red wine vin, red wine vin., as you like)
To assemble salad, toss diced pear with pepper and 1 Tbsp of the vinegar.
Place one lettuce leaf on each serving plate. Divide the spinach between
the two plates and sprinkle with remaining vinegar, to taste. Distribute
diced pear over the spinach, toss pomegranate seeds over the salads and
serve.

I think that you should definately bake the bread and serve it to the others who will be dining. But you should also have a carb-free option as well. Some side ideas include - green salad, steamed veggies, baked sweet potatoes (very little carbs), or she will just have to deal and eat just the soup.

Spring rolls, This recipe is really easy; it's really more of a process than a recipe. Rice paper wrappers, which are available in the ethnic sections of most larger supermarkets these days, are a great way to wrap your veggies and protein for a quick snack or light lunch. Minutes to Prepare: 5 Number of Servings: 6 Ingredients 3 sheets of rice paper Basil Sauce 1 T fat-free mayonnaise 1 T prepared pesto 1/2 t Dijon mustard Thai Sauce 1 T fat-free mayonnaise 1 T Thai sauce Filling 1 c carrots, shredded 1 c broccoli slaw or chopped broccoli 2 bell peppers, sliced 1 c mushrooms, sliced Protein: select one, (nutritional info is based on chicken) 6 oz chicken breast, sliced 6 oz turkey, sliced 6 oz cheese (mozzarella or string) Directions Make the sauce of your choice by combining the ingredients in a small bowl. (If you prefer one sauce to the other, just double that recipe.) Place the rice papers one at a time in a flat dish filled with hot water. Immerse for 5 seconds. Remove from the water and lay flat on a clean kitchen towel. Spread desired sauce on the rice paper then fill with 1/3 of the vegetables and meat or cheese. Fold in sides of the paper to form a seal, then roll from the bottom of the circle away from you to form an egg roll shape. Repeat until all three rice papers have been filled. the other answers were good but I just want to say that the Atkins diet gave me some serious health issues that lingered for 3 years afterward. Tell her to be careful, my problems didn't start until I went back to eating normal. The weight loss is temporary anyway. It's just not worth it.
