I'm going to a potluck tonight, and the provided main dish is chili... What would be good to bring that would compliment that?

Any side dish featuring corn is a good bet.
Also you may want to take a chili "condiment" tray. It could have things like plain cooked rice, sourcream, shredded cheese, crackers. All kinds of things that are good to toss into a bowl of chili.
A nice tossed salad is also a good compliment to chili, it balances the hot/cold issue.

Lots of people like shreaded cheese sprinkled on it. You could shred some colby jack, some good cheddar & jalapeno cheese. Also, a dollop of sour cream or yogurt to garnish their helping of chili. A mango salsa is fabulous with a tomato-based chile. You could create a tray of these things & have sliced jalapenos on there and maybe some red onion. A corn salsa. A corn casserole or souffle is a good side dish with chile. I will make tomato-based chile with a corn casserole and serve garlic toast with it. This is making me hungry.

Cornbread muffins would be a good choice. Or you could bring an assortment of chili toppers, like chopped onion, shredded cheese, Fritos, or sour cream. Tortilla chips and guacamole would also be nice.

For some reason my mother has always served carrot sticks and cinnamon rolls when she makes chili. You could make some huge cinnamon rolls and everyone would love 'em! Or just bring some really good bread/rolls.

Nachos, or a leafy green salad with Monterrey Jack cheese , bacon bits, tomatoes, green pepper and maybe a spicy Italian vinagrette? You might also bring warm garlic bread or bread sticks.

Cole Slaw or a relish tray or Fritos and cheese and chopt onions for those that might like a Frito Pie

A wonderful green salad, onions, corn bread, crackers, Frito's, tortilla chips, Baked potatoes, cheese,Mexican casserole,chocolate cake. many things go with Chile.

MAKE SOME CORN-BREAD -BUT -
POUR 1/2 THE BATTER AND THEN LAYER WITH HOT DOGS SPLIT LENGHTWISE
, SOME CHEDDAR-CHEESE ,AND SOME CHOPPED BELL PEPPERS THEN ADD THE REMAINING BATTER AND BAKE (you can put anything between the batter for tasty surprise's)
i've tried -some different fish and shrimp and have no complaints ! so-far !!
