Meat Loaf (worthy of the Man himself)
2 lbs ground beef (I prefer 1½ lbs ground beef, ½ lb ground veal)3 eggs, beaten
1 large onion, chopped
2 carrots, chopped
1 tsp salt
1½ cups bread crumbs
1 tsp pepper
1 tbsp parsley
2 small cans tomato sauce
1 stalk celery, finely chopped
pinch thyme
1 tbsp paprika
Set aside one can of tomato sauce. Mix all remaining ingredients together by hand. Stuff meat into loaf pan and bake at 400 for about 1 hour. About 10 minutes before removing from oven, drain off grease, and top loaf with remaining can of tomato sauce.

Here's a great recipe for Stuffed Meatloaf:
1 1/2 lbs ground beef (you can use some ground pork if you like as well)
2 eggs
1/4 cup breadcrumbs
1 cup broccoli
1/2 onion, diced
4-6 ounces sliced mushrooms
2 TBSP minced garlic
A1 steak sauce
salt and pepper
1) Preheat oven to 375 F. Spray a loaf pan with Pam. In a bowl, combine ground beef, eggs, breadcrumbs, garlic. Mush together well with hands. Add A1 sauce, salt, and pepper to taste. Mush together some more.
2) In the loaf pan, put half the meat mixture in and spread it into a loaf formation. Then pile on the broccoli, cauliflower, onion, and mushrooms (add or subtract any veggies you like best! I also add some shredded cheese). Then take the second half of the meat mixture and mush it on top in a loaf formation.
3) Bake in the oven for 35-45 minutes, or until cooked to desired doneness.
Delicious served with mashed potatoes and some brown gravy!

6 ounces garlic-flavored croutons
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped

3 whole cloves garlic
1/2 red bell pepper
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoons kosher salt
1 egg
For the glaze:
1/2 cup catsup
1 tablespoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey
Heat oven to 325 degrees F.
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.
Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.
Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

(This meatloaf is fantastic. Even my picky 2 1/2 year old son loves it.)
1 1/2 pounds lean ground beef
1/2 cup crushed buttery round crackers
3/4 cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup
2 tablespoons steak sauce
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together ground beef, crushed crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 inch loaf pan.
Bake in preheated oven 45 to 60 minutes, until no longer pink.

1/4 cup water
5 dashes tabasco
1 Tbsp Worcestershire sauce
1 tsp salt
1 egg lightly beaten
Method
Mix all together and form into a loaf.
Bake 45 minutes at 350 degrees F (175C), remove simple meatloaf from the oven and pour ketchup on top.
Return to oven for another 15 minutes.
P.S. if you put double smoked bacon on top of the meat loaf before you put it into the over, it tasts even better!

Ingredients
1-1/2 lb. ground beef
1-1/2 cups each fresh breadcrumbs; shredded aged Swiss cheese, divided
1 cup milk
1/2 cup each chopped onion, raisins
1 egg
1 tsp. salt
1/4 tsp. pepper
Directions
Heat oven to 350º F. Combine all ingredients except 1/2 cup
cheese; mix lightly. Place mixture in 9Ã5″ loaf pan. Bake at 350º F.
1 hour 30 minutes. Sprinkle with remaining cheese; return to oven
until cheese melts.
Makes 6-8 servings.

Melt-In-Your-Mouth Meatloaf (Crock Pot/Slow Cooker)
2 eggs
¾ cup milk
2/3 cup seasoned breadcrumbs
2 tsp. dried minced onion
½ tsp. salt
½ tsp. rubbed sage
1½ lbs. ground beef
¼ cup ketchup
2 Tbsp. brown sugar
½ tsp. ground mustard
½ tsp. Worcestershire sauce
In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well (mixture will be moist). Shape into a round loaf: place in a 5-qt. Slow cooker. Cover and cook over low for 5 – 6 hours or until a meat thermometer reads 160°F.
In a small bowl, whisk the ketchup, brown sugar, mustard, and Worcestershire sauce. Spoon over the meatloaf. Cook 15 minutes longer or until heated through. Let stand for 10 – 15 minutes before cutting.

In a large bowl, mix 2 pounds hamburger, 2 eggs, 1/2 cup of milk, and 2 dried out pieces of bread finely crumbled and 1 package of meat loaf seasoning. (seasoning is optional as well as cutting some onions and adding those) Form into an oval loaf on a shallow baking pan or pat into a greased loaf pan. Bake in a 375 degree oven for 55-60 minutes. It's a method thing, rather than a recipe. Here's sort of the most basic one that I make.
Meatloaf:
1 bell pepper, cored, seeded, and minced
1 onion, trimmed and minced or grated
minced garlic
salt
black pepper
1 egg
handful bread crumbs/cracker crumbs/quick-cooking oats
1 lb. ground beef/turkey
tomato sauce/ketchup/tomato jelly
This usually works for about 4 people, with leftovers. Mix and match according to what you like; my boyfriend doesn't like green peppers so I make it with mushrooms instead for him. The veggies help keep it moist. Bake it at 350 for about an hour or until it's cooked through. I usually put about half of the tomato product in the mix and the rest on top--salsa is also good.

2 large egg whites
1/4 teaspoon pepper

2. Combine meat, 1/4 cup barbecue sauce, onion, breadcrumbs, egg whites, and pepper in a large bowl; stir well.
3. Shape mixture into a 7Ã5″ loaf on a rack in a roasting pan. Spread remaining 1/4 cup barbecue sauce over loaf. Bake at 375°F for 25 minutes or to desired dfegree of doneness. Yeild: 4 servings.
