I bought a whole chicken (4lbs) from the grocery store and I'd like to get as many meals out of it as possible. What is the best way to do this? Roast the chicken, eat some of the meat, save the rest, and then make chicken broth? Cut the chicken into peices and freeze some of them? There are just two of us in my household but we bring leftovers for lunch.

Now that I've switched from lots of work and 2 classes, to 5 classes and very little work I've gotten good at being "cheap"! We do the chicken thing often.

Day one--roasted bird w/ sides. Use just one side of the breast(sliced a 4pder should make enough for two to have 1/2 to split). Carve the rest into reg pieces, BUT save the carcass!

Day 2: chicken pot pie. Chop remaining breast half and add to 1 can cream mushroom/ 1/2 can milk, 16oz frozen mix veg, pepper and thyme. Heat well, put in casserole. Topping: 1c bisquick, handfull cheddar shreds, and enough milk to make stiff dough. Bake 350 for 25 mins--until brown and bubbly.

Day 3: chicken tacos! Shred leg/thigh meat, combine with taco seasoning and water. Meat, tortillas, topppings and fruit make the meal.

Day 4: Roast carcass (break up) with root veggies and herbs until dark brown. Transfer to soup pot and cover +1inch with water. Bring to boil, reduce, simmer 40 mins. Strain out and add veggies, simmering till tender. Add bits of meat from wings. Can also add noodles or rice.

Good luck! Good eats don't have to be expensive ones. :)

You will need a large stockpot. Prepare a miripoix (1 part small diced carrots, 1 part small diced celery, and 2 parts small diced onion). Next put stockpot on element and set to medium high. Add oil/fat (except shortening/lard) butter is best but margarine will suffice then melt it and heat it making sure not to let smoke or burn. When heated add miripoix and stir continuously until well sauteed. Remove pot from heat souce and then place chicken on top of miripoix and fill with water up to 2" from the top. Bring to a boil, then turn down to simmer, and let simmer for approx. 2 1/2 hours/until meat is falling off of the bone. Remove chicken and place on dish. Take meat off chicken and place in a separate dish. Keep or discard skin and fat. Save some chicken for soup to add to the broth you just made; save some of the broth and make a roux to thicken it with to make a gravy;save some chicken, to make hot chicken sandwiches; save some for stir-frys, fried rice. Or if you want you can thicken broth with a roux and add de-boned chicken and make a stew. Leftovers can be made into chicken meat pies.

Bake the chicken as a meal
Leftover chicken for sandwiches.
Leftover chicken for chicken pot pie (see bisquick.com for good pot pie recipe)
Boil the chicken bones with some meat still on it for chicken broth. Use the broth to make chicken soup and chicken and dumplings. Save some leftover chicken for the dumplings.

When I buy a whole chicken for me and my husband - we get at least 6 or more meals out of it.

Boil the chicken, throw away the bones.....Retain stock/Divide chicken into light and dark meat......Day 1-Freeze white meat and Add dark meat chicken and vegetables with frozen egg noodles=Chicken Noodle Soup....Day 2-Leftover soup or Drain stock, add cream of mushroom soup=Chicken casserole....Day 3-(Take white meat out of freezer and refrigerate for day 4 )Leftovers as is or put in baking dish and cover with crescent rolls to make chicken pot pies.....Day 4 Leftovers. Day 5-Take white meat chicken add grapes, walnuts and mayonnaise to make chicken salad, place over lettuce. Day 6-Take leftovers and make finger sandwiches on dollar rolls. Day 7-Go to the grocery store again. Hope this helps

If you have a crock pot you can do all you mentioned in one easy step! (I put one in the crock pot before work today.) Simply place the chicken, which has been rinsed, of course, in the crock, sprinkle with salt and pepper and cook on low for 8-10 hours. You don't have to add any liquid. The chicken leaves A LOT of liquid in the pot as it cooks. You've got your meal for tonight, leftover chicken for another dish, and instant chicken broth. (You'll have to dilute it with some water.) I would roast the chicken. Eat that for dinner one night. Then you can pull the meat off the bones and use that for another meal or sandwiches. Then you can use the bones for a chicken soup.

boy you answered your own question i do the same with turkey..you can make turkey ala king from diced turkey...turkey salad sandwuiches...of course soup......after cokking the bones pick all the meat and make creamed turkey on biscuits...excuse i am using turkey but you get the point just put in chicken it all the same except more of the turkey.........diced makes nice indv..pot pies...i havent figured out what to use bones for yet but if i do i will let you know.......i am very furgual when it come to chicken or turkey as there is so many uses it it is cheap per pound,...

a whole chicken makes a great pot of chicken /noodle soup... eat some freeze rest makes great lunches......

you may also make chicken tacos, enchiladas, casarole, chicken with vegies & egg noodles are also great
