I am an Indian. 90% of indians have arranged marriages. The process is somewhat like: whenever parents come in contact with a suitable looking match they fix an appointment with girl's family where both families meet. Then the elders say that let the boy and girl talk for a moment. Now here lies my concern. What to talk so that you can make out how she is. Ofcourse nobody can be judged in such meeting (10-15 minutes). But still some intelligent question are there I know.

If I was potentially going to be married to someone I really don't know, I would ask her/him about things s/he likes and things s/he doesn't like.

Find what you both have in common and grow on that. A good friendship made is a great marriage to be had.

Rome was not built in a day. Your parents, the girl's parents also know that. Relax. No offence meant. Its all in good humour and all my own research work done.the first 10-15 minutes are given (to check breath...so brush your teeth regularly) (to check sweat/body odour.so use more deodrants) to see closely the figure, the shape of the body.to check the chemistry. If it works everyway, bingo. If it does not work, whisper in the girl/boy's ears to ask for another session, some other time, some other place and some other day. After that sleep over the whole day or max a week and tell your parents your correct answer.

First question should be whether she likes u,whether interested or not. Whether she is willing to work? so that u can come to a conclusion that she can act independently. I think this is most important. As u said by communicating 10-15 mts u cannot judge the original character. Some might be her original character & some might be artificial like many people used to do during their interview they pretends as if they r very dedicated workers in the world. But the originality come to know after one or two month. so the first 2 question is enuf.

Remember, since she is a girl she will be more tense and shy.
Start a conversation by asking about her family and the area around her or something so that her mind will become cool.
Make a few jokes, doesn't matter if they turn out dry but just to make her laugh so that she might start liking you more because girls like guys who can maintain a conversation.

If you like her then tell and finally just ask her if she likes you in a joking manner and if she smiles, everything is alright. You'll live happily ever after

a casual talk could help u know a her a little.start telling abt ur education ,work and family, and ask the same abt her, when u start asking abt the persons in her family like brothers sisters, their kids like that, she will get relaxed to speak to u in her usual self , it will be a good start to know abt her.u too can ask abt friends and tell abt ur.u could talk abt both of ur interests.it's a start but it takes a long way to know one better.

Ask her interest, hobbies, likes and dislikes.. I usually like to ask someones favorite movie, or what movies or shows they've watched lately.. that will get the ball rolling.
