I've tried so many different recipes, trying to find one my family enjoys with no luck. The neighbors fig tree is dropping fruit like crazy. Help!!

Fig preserves. I used to make them w/ a combo of 2 kinds of figs (Celeste and lemon aka Florentine figs) which made the preserves a light golden brown color. Cut the hard ends off, wash figs. Put 1/2 white sugar and 1/2 figs to cook at a med to low heat. Cook for a while (at least an hour or so), till cooked down. Then can in sterile glass jars that have just been freshly boiled. Boil the lids and seals. Make sure they "pop" so you do not breed botulism. I used to make the fig preserves every year for my grandmother. They were her favorite.

Fresh Fig Preserves Recipe
Ingredients
4 pounds firm, ripe figs
4-1/2 pounds sugar
1/4 cup fresh lemon juice
2 lemons, sliced
A few pieces of whole stick cinnamon or ginger root (optional)


Instructions
Wash and peel figs; set aside. Combine sugar and lemon juice in large nonreactive saucepan; add enough water to dissolve sugar. Add figs and lemon slices; cook about 45 minutes (the cinnamon or ginger may be tied in a cheesecloth bag and cooked with figs for added flavor). Stir frequently to prevent sticking.

Pack preserves into clean, hot jars, and seal immediately. Process in boiling water bath 5 minutes for half-pints, 10 minutes for pints.

Makes 8 to 10 (6-ounce) jars.

Fresh Fig Quesadillas –
Ingredients 1 - 1/2 tablespoons extra virgin olive oil
Four 9-inch flour tortillas
2 cups (about 8 ounces) coarsely shredded cheese (see Headnote)
1 cup diced trimmed firm ripe green or black figs (about 8 ounces or 6 large figs)
2 tablespoons minced red onion
2 tablespoons minced cilantro
1 tablespoon extra virgin olive oil

Steps 1. Preheat the oven to 350˚F. Brush a large baking sheet with about 1-1/2 tablespoons of olive oil.

2. Place 4 tortillas on the baking sheet. Spread 1/4 cup of the cheese on the bottom half of each tortillas. Add a layer of fig using 1/4 cup for each tortillas. Sprinkle each with about 1/2 tablespoon of the red onion and the cilantro. Top each with 1/4 cup of the remaining cheese. Fold the tortillas over to make half circles; press down lightly.

3. Bake, until the tortillas are golden brown on the bottom, about 8 minutes. With a wide spatula turn the tortillas; bake until the bottoms are golden brown, about 3 minutes. Remove the pan from the oven and cool slightly. Transfer the quesadillas to a cutting board and use a knife or scissors to cut each one into 4 wedges. Serve warm.

Makes 4 servings.

I love to stuff figs with rich cheese and serve as an appetizer. Here are two versions I recommend and have had a lot of success with:

Sweet: Fill with mascarpone cheese, cognac and toasted nuts (hazelnuts, walnuts) and bake

Savory: Fill with goat cheese or gorgonzola and bake or wrap with prosciutto or bacon and bake.
