Best pancakes, add chopped banana's and cinnamon to them!
For the best drink, I don't really like cocktails, but Jose Quervo, and their margarita mix is easier than ever!

If I don't have fruit in the pancakes like blueberries or banana, then I like to put on fresh strawberries or a low sugar jam instead of maple syrup.
Try balsamic vinegar reduced in half in a warm pan and a teaspoon of vanilla extract poured over fresh strawberries, mmmmm!
A good cocktail is Bacardi rum and any fruit juice, frozen fruit or fresh fruit either blended with ice or on the rocks (daiquiri).

A great cocktail to go with the pancakes is a Mimosa. Half OJ, half champagne. Yummy!!!! On second thought, I'll just skip the pancakes.

Best thing to put on pancakes is syrup and butter.
Great pancake recipe:
1 cup flour
1tblsp sugar
2 tsp baking powder
1/4 tsp salt
1 beaten egg
1 cup milk
2 tblsp oil
Best alchoholic coctail drink is a mojito- a cuban drink I think. It's got lime, sugar and rum I think. I'd do a google search for a mojito recipe.

blueberries on pancakes is wonderful, also i like a little coconut sprinkled w/ powdered sugar and pineapple chunks w/ hot maple syrup....ummmmm
keep it simple w/ the alcohol: fuzzy naval w/ very little orange juice and peach schnapps, vodka
or vodka and Ocean Spraywhite cranberry peach juice (mixed drink over ice)

my favourites are fried mushrooms wrapped into pancakes. serve with sauce made of fried onions, mushrooms and sourcream.
other choices:
cheese
banana
curd with rasins
spinach with ricota
(wrapped into pan-sized pancakes an fried again)

my kids love strawberry banana pancakes ....just make your batter like normal and then smash up bananas and mix it in the batter. cook your cakes.
make strawberry sauce like you would for strawberry shortcake and top the cakes.
you can add chocolate chips to the batter too!

Apple-Glazed Dessert Pancake:
1 tablespoon margarine
3 cups sliced Rome apple (about 1 pound)
1 tablespoon brown sugar
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup apple juice
1/4 cup water
1 teaspoon cornstarch
1 cup all-purpose flour
2 cups 1% low-fat milk, divided
2 teaspoons vanilla extract
1/4 teaspoon salt
1/3 cup sugar
2 large eggs
2 large egg whites
Cooking spray
1 tablespoon powdered sugar
Preheat oven to 425°.
Melt margarine in a 10-inch cast-iron skillet over medium-high heat. Add apple; sauté 3 minutes. Stir in brown sugar, cinnamon, and nutmeg; cook 2 minutes. Combine juice, water, and cornstarch in a small bowl. Stir well; add to skillet. Bring to a boil; cook 1 minute or until thick, stirring gently. Remove apple mixture from skillet; set aside, and keep warm. Wipe skillet clean with a paper towel.
Place skillet in oven for 5 minutes. Combine flour and 1 cup milk in a large bowl; stir well with a whisk. Stir in 1 cup milk, vanilla, and next 4 ingredients (vanilla through egg whites); set aside. Coat skillet with cooking spray; pour batter into preheated skillet. Bake at 425° for 25 minutes or until puffy and brown around edges. Remove from oven; sprinkle with powdered sugar. Cut into wedges; top with apple mixture. Serve immediately.
Yield: 8 servings (serving size: 1 wedge and 1/4 cup topping

Avocado-Shrimp Cocktail:
Notes: In Mexico, saltine crackers are often served with seafood cocktails like this.
1 can (11 1/2 oz.) tomato and chili cocktail (bloody Mary) mix
1/3 cup tequila
3 tablespoons lime juice
1/3 cup finely chopped onion, rinsed and drained
1/3 cup chopped fresh cilantro
2 to 3 teaspoons minced fresh jalapeño chili
2 firm-ripe avocados (1 to 1 1/4 lb. total)
3/4 pound shelled cooked shrimp (50 to 70 per lb.), rinsed
Kosher or regular salt
Lime wedges
Tortilla chips or saltine crackers
1. In a bowl, stir together tomato and chili cocktail mix, tequila, lime juice, onion, cilantro, and 2 teaspoons chili.
2. Pit and peel avocados; cut into 1/2-inch cubes. Add avocados and shrimp to cocktail mixture. Mix gently and add salt and more chili to taste.
3. If desired, rub rims of 4 to 6 margarita or martini glasses with a lime wedge. Immediately dip into a dish filled with 1/4 inch kosher salt.
4. Spoon avocado-shrimp cocktail equally into glasses. Garnish with lime wedges and serve with tortilla chips or saltine crackers.
Yield: Makes 4 to 6 serving
