Lemon-Scented Broccoli

1/4 cup coarsely chopped pecans
1-1/2 tsp. butter
1 medium bunch of broccoli, trimmed and cut into spears
1 Tbsp sugar
2 tsp cornstarch
1/2 cup chicken broth
3-4 Tbsp lemon juice
1 tsp grated lemon peel
1/4 tsp pepper

In a small skillet. saute pecans in butter until golden brown: set aside. Place broccoli in large saucepan; add 1 inch of water. Bring to a boil. Reduce heat; cover and cook for 5-8 minutes until crisp-tender.
Meanwhile, in a small saucepan, combine the sugar, cornstarch, broth, and lemon juice until smooth. Cook and stir over medium heat for 1 minute or until thickened. Remove from heat; stir in the lemon peel and pepper. Drain broccoli and place in a serving bowl: top with lemon sauce and pecans. Serves 6.

My aunt brought that to a family dinner last year. I don't usually like broccoli and this way it's so good.

Lately I like to steam broccoli for 5- 10 minutes and then bake it until it gets a bit caramelized at the edges with a pat of butter. I do the same with brussel sprouts.

Also it's good to cook the stems of broccoli after coring it and cook that the same way. I love chopping broccoli. It's so cathartic, and you can sing that Dana Carvey song, "Choppin' Broccoli".

Make Broccoli/Cauliflower salad

Broccoli
Cauliflower
Sharp Cheddar Cheese Cubes
Mayonnaise
Real Bacon Bits

That's the basic ingredients, put in however much to your own taste you like. You can add a packet of sweetener if you like it to have a bit sweeter of a taste too. Very good!!!

Baked Potato-and-Broccoli Soup:

Prep: 20 min., Cook: 20 min. original potato-cheese soup recipe used butter, cream cheese, and cream of mushroom soup. We lightened hers by using lower-fat ingredients and adding broccoli and onions for fiber, while still maintaining the rich flavor with freshly shredded cheese and bacon pieces.

1/4 cup all-purpose flour
2 (14 1/4-ounce) cans low-sodium fat-free chicken broth, divided
3 cups peeled, cubed potato (about 1 1/4 pounds)
2 cups broccoli florets, chopped
1 small onion, chopped
1 1/4 cups 2% reduced-fat milk
1 (8-ounce) block 2% reduced-fat sharp Cheddar cheese, shredded
7 teaspoons shredded 2% reduced-fat sharp Cheddar cheese
7 teaspoons fully cooked bacon pieces
7 teaspoons chopped green onions

Whisk together flour and 1/3 cup chicken broth until smooth.

Combine remaining chicken broth and next 3 ingredients in a Dutch oven. Bring to a boil; cover, reduce heat, and simmer 8 minutes or until potatoes are tender. Gradually stir in flour mixture. Cook, stirring often, 5 minutes.

Stir in milk and 8 ounces shredded cheese. Cook mixture over medium-low heat, stirring constantly, until cheese melts. Top each serving of soup with 1 teaspoon cheese, 1 teaspoon bacon pieces, and 1 teaspoon chopped green onions.

Note: We recommend freshly shredded cheese (versus the preshredded variety) for additional creaminess and even melting.

Yield: Makes 7 servings (serving size: 1 cup) (serving size: 1 cup)

once i made broccoli lasagne which was great and broccoli added some nice crunchiness to it. just preboil it, mix it with pasta sauce and layer it: broccoli mix, lasagne sheet, white sauce, repeat 3 times, add some cheese and bake for about 30 mins.

When I make rice I like to add broccoli to it (while it is cooking).

I also add broccoli to spaghetti sauce sometimes.

And of course cheese on top of broccoli, yum!

First I'd say steam it and serve with hollandaise. Second, make a StoveTop dish with it, and creamo broccoli soup, and some cheese and bake. Those are my faves.
