I like mine hot & spicy, so adjust to your taste.
1-2 lbs Ground Beef (depends on how big of a batch you want)
Salt & Pepper to taste
1 lg Onion
2 cloves Garlic
Red Chili Powder -- to your taste, I use about 1/2 cup
Green Chili (chopped) -- to your taste, I use about 8 fresh ones.
1-2 Lg cans Ranch brand beans (with the juice)
Brown beef, add onion, garlic and cook till tender. Add salt, pepper and red chili powder to mixture. Stir well. Add beans, mix well, then add green chilis. Cook on Med till hot & bubbly. I serve with fresh Indian fry bread.

I have won amateur contests with my recipe. It's very good and very spicy !
3# ground beef
1-2 large onions, chopped
2-3 green peppers, chopped ( sometimes I use different colored peppers, just for fun )
2 hot chili seasoning packets
3 cans chili beans with sauce, do not drain
1-2 can dark or light kidney beans drianed, or one of each
3-4 cans diced tomatoes do not drian, flavored with jalapenos or any other flavor you want
4-5 large fresh jalapenos, chopped
3-4 fresh serrano peppers, chopped
1/2 jar tabasco peppers, whole( can be found in the pickle, pepperoncini section at the grocery store) I use the Trappy's or Crystal brand, just the peppers not the juice.
3-4 tablesspoons chili powder
brown ground beef, and onion, drain
add tomatoes, chili powder and seasoning packets, strring as you add.
Add beans and peppers.
stir altogether, and let simmer covered about an hour. If it is too thin, take cover off and let thicken. Cooking it longer will not hurt it and it tastes even better the next day.
It is an easy recipe and I never make it the same. It all depends on what I feel like putting in it that day.
I do add one more thing that I really like but, not everyone does. I add large green olives, whole for a something extra

You will need
One onion -red or white
1/2 Cloves of garlic
Minced Beef - 1lb/500g
1 tin of chopped tomato
A fresh chilli/ chilli powder (1 tsp or according to taste)
1 pint of beef stock
1 tbspTomato puree
1 bay leaf
1 tsp of ground cumin
1 tin of kidney beans
Salt and pepper to taste
Things to add at the end
- optional extras
Zest of lime
Dark Chocolate - min 70% cocoa
Finely chop the onion and start it frying in a couple of tablespoons of olive oil (or other oil) or as much as you think is enough to coat the onion, over a gentle heat. Stir this a little and make sure it is not burning. When it starts to soften add the garlic either finely chopped and mashed with a little salt or with a garlic press. And add the meat. Turn up the heat a little and get the meat browning off nicely, moving it around the pan as it cooks. When is browned all over - or nearly anyway - add the tinned tomatoes and the hot beef stock, the puree, bay leaf and cumin. Bring this all to the boil and cover with the lid and turn the heat down so that it is boiling but not too furiously. Now let it bubble through checking every so often and stirring and recovering. After about 3/4 of an hour the liquid should nearly have all evaporated and you will have a nice sauce. Add the drained kidney beans - wash them first and add the lime zest (tried it the other week and it is awesome) and chocolate (this is really optional but is used occasionally). Serve with rice

My homemade recipe involves using the Carrol Shelby mix in the little brown paper bag found in the spice aisle. I don't use the white corn flour to thicken I use a can of tomatoe paste. Everyone not in on my secret thinks its homemade since I slink around the kitchen with sweaty brow. Chili is hard work you have to chop onions and brown the beef, rinse the beans, and simmer all day. This mix is well worth it the chili is rich and delicious and with just the right zip. No processed flavor.

Drain the fat. upload the pureed tomatoes, kidney beans, potatoes, chili powder, salt and water. 2. cut back warmth to low and simmer approximately 30 minutes, or till potatoes are soft. upload yet another cup of water if a thinner chili is needed.

My dad has won awards with the packaged "4 alarm" chili seasoning mix (don't know the brand), but he takes out half of the chili powder and uses either chopped steak or venison instead of ground beef.
My favorite chili recipe is the turkey & tomatillo green chili in the 'Gourmet' cookbook, which I don't have right now, sorry (If you want to go to the bookstore, I highly recommend it; it's a huge yellow book, you can't miss it)

EASY CHILI
2 pounds lean ground chuck
1 onion, chopped
4 (16 ounce) cans chili-hot beans, undrained
1 (1 3/4 ounce) packages chili seasoning mix
1 (46 ounce) can tomato juice
Cook beef and onion in a Dutch oven, stirring until meat crumbles; drain. Stir in remaining ingredients. Bring mixture to a boil; reduce heat and simmer, stirring occasionally for 2 hours.

This is how I have been doing it for many years.
you can garnish with shredded cheddar cheese in on top in each individual bowl Very simple, very easy, very good. Good luck

I use browned ground beef, onions, garlic, jalapenos, pinto beans, bay leaves, and instead of tomato sauce I use my favorite bloody mary mix (Red Eye). It's simple, but always got raves at my restaurant.
