Try this as an alternative. Another version is brushed with beaten egg to which coarse salt and chopped onions are added. Marvellous!

(Lebanese thyme bread)
1 Tbsp (1 enveloppe) active dry yeast (or 1/2 oz compressed yeast)
1 tsp sugar
1 1/4 c lukewarm water
3 1/4 c all-purpose flour
1/2 tsp salt
6 Tbsp extra virgin olive oil
4 Tbsp zaatar ( = 2 heaped tsp dried thyme +
1 heaped tsp dried marjoram +
3 Tbsp sesame seeds)
Proof the yeast in a few tablespoons of the warm water, with
the sugar mixed in.
Sift the flour and salt into a large bowl and make a well in the
center. Add teh yeast mixture and remaining water and knead until
you have a firm dough. Transgfer to a floured work surface and
continue to knead for 10-15 minutes or until smooth and elastic.
During this time, knea in 1 tablespoon olive oil into the dough -
this will make it softer.
Wash and dry the mixing bowl and grease with a little oil. Add
the dough andand roll around in the bowl until well oiled. Cover
with a clean cloth and leave in a warm place to rise for about
2 hours or until doubled in bulk.
Punch down the dough and knead for a few minutes. Divide into 10
portions and roll each between your palms until smooth and round.
Flour a work surface. Flatten each round with a rolling pin until
it is circular, even, and about 1/4 inch thick. Cover and leave
in a warm place to rise for 20 more minutes.
Preheat the oven to 450F. Put 2 large oiled baking sheets in the
oven to heat.
Brush the tops of the rounds with a little of the olive oil, Mix
the remaining oil with the zaatar and spread the mixture over the
surface of each round.
Slide the bread onto the hot baking sheets and bake for 8-10 minutes.
Remove from the oven and place on wire racks to cool.

buy a packet of puff pastry, roll out, cover in grated cheese, salt, pepper, mustard powder are optional. fold and roll again, so cheese is in the middle, cut into strips, or strips and then twisted, or squares. cook for 10-12 minutes on a high temperature. cool and serve or store

Pretzels I
2 (1/4-ounce) packages active dry yeast or 5 teaspoons
1 cup water, divided use
1/2 teaspoon honey
1 tablespoon corn oil
1 1/2 teaspoons salt
3 cups all-purpose or bread flour, divided use
1 large egg yolk
1 tablespoon milk
1 tablespoon coarse salt
1. Dissolve 1/2 of the yeast in 1/4 cup of warm water (105°F to 115°F); let sit undisturbed for 3 to 5 hours.
2. Next, combine remaining yeast with 1/4 cup of warm water (105°F to 115°F); let sit for 3 to 4 minutes, or until foamy. Dissolve honey in remaining water (hot tap water is fine); stir in oil and salt. When cool, mix it together with both yeast mixtures in a large bowl. Add 2 cups of flour, incorporating it with a spoon or plastic dough scraper and mixing vigorously for 3 or 4 minutes. Turn mixture out onto a lightly floured surface and, using the remaining cup of flour, knead the mass into a medium-firm dough. Let the dough rise, covered and in a warm spot, for 30 minutes, until almost doubled in size.
3. Punch dough down and form into a tight ball. Coat with a little corn or vegetable oil and place it back in the bowl. Cover dough with plastic wrap and let it rise in the refrigerator for 2 to 4 hours. When doubled in size, take dough out of refrigerator and shape it immediately. Divide dough in 14 equal pieces and roll each piece into a log about 24-inches long. The strands of dough should be about 3/4-inches in diameter in the middle and taper down to 1/4 inch at each end. Bend each strand into desired pretzel shape and place on a parchment-lined baking sheet. Brush pretzels with a mixture of egg yolk and milk, sprinkle with coarse salt, cover loosely and let rise for 30 more minutes
4. Preheat oven to 375°F.
5. Bake pretzels for 30 minutes or until dark golden brown. Cool on a wire rack.
Makes 14 pretzels.
