Fruit juices work, or broths. I prefer broths, even when I drank I didn't care much for the taste of wine in most recipes. Get REAL fancy and make your own broths, and that's really good. If you use canned or bouillon, be careful they are mostly salt, so don't add any other salt to recipe until you taste is well along in the cooking process.

Apple juice mixed 50/50 with chicken stock although 99.999% of the alcohol is cooked out of the wine.

You could try a good quality balsamic vinegar mixed with a pinch of sugar instead of red wine. Add extra water to make up to a glass. For white wine you could try cider or white wine vinegar diluted with water. Don't know if that helps at all..........

If you're making chicken, you can use the same amount of chicken broth (I do this for lots of recipes) or water. For beef, you can use beef broth or water. Sometimes I use lemon juice. Experiment a little and see what tastes best to you.

nothing will substitute it for the taste for sure! so what if you don't drink...you can still cook with it, it cooks all the alcohol out anyway - its just the taste!
