Depends on why they died. If you poisoned them or had them exterminated, probably not. If they died due to disease, particularly Hantavirus, their droppings could still transmit the disease.

smell indicates the presence of dead tissue. the smell doesn't pose the threat, but the presence of the tissue certainly does.
