I found this recipe for Herbed Beans and Carrots in the Jan/Feb 2006 Issue of Quick Cooking:

1/2 lb. fresh green beans, trimmed
3 medium carrots, julienned (I bought baby carrots and sliced them in four lengthwise)
2 Tbsp. water
2 Tbsp. butter or margarine
1/2 tsp. dried rosemary, crushed
1/4 tsp. salt
1/4 tsp. dried thyme
1/8 tsp. lemon-pepper seasoning

Place the beans and carrots in a microwave-safe 8 in. square dish. Add water. Cover and microwave on high 3 - 4 minutes or until crisp-tender; drain. Stir in butter and seasonings. Yield: 4 servings.

Since I found this recipe, I have been adding lemon-pepper seasoning salt to most of the frozen vegetables that I microwave like green beans, peas, carrots. It's a simple way to add something to vegetables. My husband and almost 3 year old daughter seem to be eating more vegetables since I started adding the lemon-pepper.

Veggie pizza is pretty easy and a crowd pleaser, particularly if you make the base/dough yourself (use a breadmaker if you have one) Roll out the dough spread on tomato paste and maybe some pesto. Cover with onions, peppers, courgettes etc cheese a drizzle of olive oil, basil or mixed herbs and then medium high oven for about 20-30 mins depending on how thick the base is.

Autumn Vegetable Cobbler:

1 small onion, sliced
2 teaspoons olive oil
4 small red potatoes, cubed
2 carrots, chopped
1/4 cup water
2 medium leeks, halved lengthwise and cut into slices
2 cups chopped fresh spinach*
1 cup vegetable broth
2 teaspoons all-purpose flour
3 tablespoons minced fresh parsley
1 tablespoon soy sauce
1/2 teaspoon salt
Cornbread Topping

Sauté sliced onion in hot oil in a large saucepan over medium-high heat until tender. Add potato, carrot, and 1/4 cup water; cook, stirring constantly, 2 minutes. Add leeks and spinach, and cook 3 minutes or until spinach wilts.

Whisk together vegetable broth and flour until smooth. Stir broth mixture, minced parsley, soy sauce, and salt into spinach mixture. Bring to a boil; cook, stirring constantly, 1 minute. Reduce heat to low; cook, stirring often, 5 minutes or until thickened.

Spoon vegetable mixture into a lightly greased 8-inch baking dish. Drop Cornbread Topping by heaping tablespoonfuls onto hot vegetable mixture.

Bake at 400° for 30 minutes or until golden.

*Chopped kale, collard greens, or turnip greens may be substituted.

Yield: Makes 4 servings

A simple recipe I like and even my lil ones enjoy is mixing:

1 can Corn niblets
1 can Peas
1 can Green Beans
1 cup chopped zucchini
1/2 c chopped tomatoes
dash of salt & pepper


Mix all together and heat up in a saucepan. You can also add any other veggies you might like, this is just on of our favorites in my home. Enjoy!!

Roasted Brussels Sprouts
1 lb Brussels sprouts
2 tablespoons olive oil
1 teaspoon salt
Preheat oven to 425 degrees.
Combine ingredients in a ziploc bake and shake to coat.
Place brussel sprouts on a baking tray.
Bake for 40 minutes, stirring halfway through.

This is a family favorite.
Zucchini (depends how many people)
fresh Parmesan cheese
butter
salt and pepper

Get a microwave safe bowl,spray with non-stick spray.Slice veg in 1/4" circles.Layer veg,cheese,butter and salt and pepper to taste.Cover and microwave till tender. Enjoy!

Pretty generic question with what exactly you are looking for. But I'll try. I like to steam broccoli, zucchini and yellow squash with some chicken broth and seasoning.

A new favourite at our house....(didn't have any other veggies in the house and I'm a stickler for having all the food groups at dinner for the kids!)

Slice tomatoes, drizzle with olive oil, grate or slice cheese, mozzarella, provolone, swiss, whatever you have in the house and broil for about 2 minutes (sometimes I add a little steak spice, garlic or italian seasonings)
