You know, "Mexican" is not really a single thing. Many, many Mexicans are themselves a mixture of various ethnicities. And this Caucasian thing is not really acurate, either. Neither is the idea that Latinos are a genetic group, or that people from Spain and their decendants are not white...the whole thing is a mess, a total mess. That's what we get when we think in terms of race.
But, since you get 50% of your genes from each parent, you would be 37.5% whatever you figure is Mexican....

So 3 of your 8 great-grandparents are Mexican and 5 or them are white so you'd be about 37 and a 1/2 percent Mexican.

Count up the great-grandparents. You have eight and three of them (your mom's three Mexican grandparents) are Mexican. So, you're 3/8 (or 37.5%) Mexican.
