Catfish is wonderful fried. Simply roll it in cornmeal that has been seasoned well with whatever you like (onion salt, garlic powder, black pepper, etc.) then fry. Be careful not to overcook. It gets tough, but don't undercook, that's icky. :) You can buy catfish nuggets at the grocer which is a very inexpensive way to feed a crowd. Enjoy!!

I like to fry my catfish. I've never fried my own in cornmeal, but I've had it at restaurants and it's good. But I've tried the Zatarian's fish fry mix, but I also added some creole seasoning to give it a little kick. I usually mix a little water with it to coat the fish better. But you can use an egg wash or milk wash as well.

Baked Lemon-Dill Catfish:
Prep: 20 min., Bake: 20 min.
1/2 cup mayonnaise
1/4 cup buttermilk
1 teaspoon grated lemon rind
3 tablespoons fresh lemon juice
2 tablespoons chopped fresh dill
1 garlic clove, minced
4 (4- to 6-ounce) catfish fillets
1 teaspoon salt
1/4 teaspoon pepper
1 cup fine, dry breadcrumbs
Stir together mayonnaise and next 5 ingredients in a small bowl. Place half of mayonnaise mixture in another small bowl to serve with fish; cover and chill until ready to serve.
Rinse fillets, and pat dry with paper towels. Brush fillets evenly with remaining half of mayonnaise mixture; sprinkle evenly with salt and pepper. Dredge fillets in breadcrumbs. Arrange fillets on a lightly greased rack in an aluminum foil-lined broiler pan.
Bake at 425° for 20 minutes or until fish flakes with a fork and is opaque throughout. Serve immediately with chilled mayonnaise mixture.
Yield: Makes 4 servings

Go to the FoodNetwork.com site. The was an Iron Chef America episode with catfish... It was Batali vs. Chef Treviño from Puerto Rico.
Treviño Dishes were: trio of catfish ceviches with fresh tostones, miso honey catfish, Israeli couscous catfish paella, catfish "chop" with risotto-style posole, catfish fritters with Aztec chocolate love potion.
Batali's were: catfish squash blossom and roasted catfish in saor, catfish Yankee breakfast, catfish & potato tortelloni, catfish acqua pazzo, catfish in cartoccio.

Blackened Catfish With Lemon Butter
--------------------------------------------------
4 catfish fillets
olive oil
1/3 lb. bacon
2 teaspoons each of the following:
garlic powder
thyme
white pepper
black pepper
cayenne pepper
lemon pepper
cumin or chili powder
rosemary, crushed
fennel seed, crushed
1 teaspoon allspice
1 teaspoon oregano
½ teaspoon salt
Fry bacon; discard bacon and retain grease. Combine all dry ingredients, rub fillets with olive oil, then coat liberally with spices. Drop in hot bacon grease and cook until you can
easily put a fork through them.
Serve with lemon butter:
¼ cup melted butter
1 teaspoon lemon juice
½ teaspoon tabasco
sliced green onions
Cajun Catfish
--------------------------------------
2 large catfish fillets
1 cup onions, chopped fine
½ cup celery, chopped fine
2 garlic cloves, minced
¼ cup butter
¼ cup flour
1 tsp salt
½ tsp black pepper
¼ tsp cayenne pepper
1 1-lb can sliced tomatoes
3 cups water
2 cups hot cooked rice
In a deep skillet, cook the butter and flour together over low heat to form a roux. Add the onions, celery, and garlic,and sauté until tender. Add the tomatoes, salt, peppers, and water. Simmer covered for 20 - 30 minutes. Add the fillets and cook until flaky, 15 - 20 minutes. Serve over rice. Serves 2.
NOTE: The amount of cayenne here is set for a mildly hot taste. It can be increased up to a full teaspoon for real Cajun flavor!

this is delicious - 1 cup red onion, 1 cup parm cheese, 1 cup sour cream; mix together, top the fish with miture, broil until cheese is light brown.

Salt and peppered, coated in corn meal and deep fried. Serve it with hushpuppies, cole slaw, and tartar sauce. :) Yea I'm an Alabama girl. :)
