What is the best egg substitute for baking a cake? Yogart, sour cream, apple sauce, butter, banana, mayo??? What taste the best? My 1 yr old is allergic to egg so I have never had to make anything without egg.

A nice eggless cake recipe :

Welfare Cake
"This cake is so moist that you would swear it was from a box!"
Original recipe yield: 1 - 9x13 inch pan.

INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons salt
1 tablespoon baking soda
1/2 cup vegetable oil
2 tablespoons distilled white vinegar
1 1/2 teaspoons vanilla extract
2 cups water

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla.
Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.

Depends on what type of cake. The book I'm copying this from is actually talking about fat substitutes but this is just to give you some ideas:

'Liqueur for some cakes, light sour cream for chocolate ones; fruit juice or purees work well with carrot, apple and spice cakes.'

I don't like using eggs in cakes so I use applesauce and mayo to replace the eggs and oil, taste great.

Mayo usually, but check and see if the brand you use actually has eggs. Some still do.
