The easiest recipe in the world is Shrimp Alfredo. Buy frozen shrimp by the pound (it doesn't take much for a single person or a couple, like maybe 1/2 pound), have the deli steam it for you while you run over to the spaghetti lane and buy linguine and a nice jar of Alfredo sauce. Don't forget to buy the grated Parmesan cheese from the refrigerated section (comes in a bag). Cook the noodles. Heat the Alfredo sauce in a small saucepan, add the shrimp. Pick up a bag of salad greens and good bottle of dressing and there you go!! If you buy all the ingredients from Walmart this is a very inexpensive dinner. Bon Apetite!!

Mango Muffins

18 muffins 33 min 15 min prep
Change to: muffins US Metric
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar or 3/4 cup honey
1/4 cup vegetable oil
1 cup milk
1 egg
1-1 1/2 cup mangoes, pulp of (2 very ripe Mangos)

Lighter Fare Muffins
Cut and peel two very ripe (soft to the touch) Mangos and reduce to soft pulp and juice. Combine flour, baking powder, salt and sugar in a large bowl.
In a seperate bowl combine oil, milk, and egg.
Mix liquid ingredients with dry until just moist and stir in the Mango pulp.
Fill greased muffin tins, or paper muffin cups two-thirds full.
Bake at 400 degrees (F) for 15-18 minutes.
They are done when they are brown on top and a tooth-pick inserted into the center comes out clean.

Pasta ( Penne ) with a blue cheese sauce and broccoli - healthy tasty. You could add some small pieces of crispy fried bacon as a naughty bit and some bread , oiled with olive oil fried quickly.

I'm having champagne and canapes. Could do sushi too, though! Why don't you try pasta with prawns, sunblush tomatoes, baby spinach and a bit of chilli? Delicious!

Enchiladas sound so good right now or lasagna but I don't have the stuff to make either one, so I guess it will be plain old chicken again.
