I am in the middle of making my meatballs and I forgot I do not have eggs!! I usually put in one for each pound of meat. Also I use bread, soaked in milk. Is there something I can use besides the raw eggs to keep the meatballs tender??

I am making Italian meatballs, they always come out perfect when I use the eggs.

A little bit of milk will do the trick to hold them together, it has worked for me in the past. Good luck

Try adding a lil more milk to compensate for the egg. Also whether you use eggs or not never ever squeeze the the meatballs tightly when forming this results in a tough meatball.
Use also parmesean and ground italian sausage or ground pork in your recipe for authenticity and great flavor.

I had the same problem yesterday.😊
My solution was to put some chia seeds in the mince.
They turned out delicious.
Chia seeds are binding.


I usually grate onion and sometimes carrot in my meatballs.this makes them juicier.
Sometimes i add garlic,chilli paste and I've even had grated Apple in my meatballs.

Egg does not really keep them tender it just binds the mix together. The breadcrumbs and milk will help do that too. I suggest you cook one without egg and see how it comes out.

Try using some potato flour add it to the liquids in your recipe, also try using using some bread crumbs or oatmeal it will help hold it together. Good Luck

If you just cook them a little slower, they will be fine. They will tend to fall apart without the egg, so be careful when turning/stirring.

I think if you fry them it might be ok. I would maybe add alittle ketchup. I once made salmon patties without eggs, it didnt stick at all. but they tasted good.
