I used to plan weddings.
So far everyone's guidelines have been pretty decent (it also depends on what part of the country you live in)
My advise to you, if you have a budget crunch and you have to skimp somewhere, don't skimp on the photographer/videographer. Your pictures are the only thing that will last past the day after your wedding.
Everything else is basically fluff for the guests.

This is what my niece did when she planned her wedding. It may sound like a cheap way to go, but I thought she and her new husband planned the start of their life together beautifully. They concentrated more on their future as husband and wife than getting into debt over a wedding.
Photographer and Videographer were family members who took the pictures and video of her wedding and reception.
She didn't use a Limo, her and her new husband used the vehicle they were using to go to their honeymoon.
Florist was also family members who got together and made floral arrangements and her bridal bouquet.
DJ: a friend of theirs knew someone who was a DJ and this guy only charged them about $50.
Before they got married, they decided to save the extra money to put a down payment on the house that they now live in. And believe me they had such a beautiful wedding, it seemed like they paid a bundle of the whole thing.

photographer--find a friend that has a digital camera and knows how to use it, they can take the pics you can look at then right there and decide if you like them or not...when you go with a pro you get what you get whether they turn out or not..had a few friends that have gone pro w/ and the pics turned out horrid.
Video- same with the photographer--find a friend that has a camcorder and see if they will tape the wedding.
Limo- I know this might sound morbid, but some funeral homes rent the limos, my father in law works for a funeral home and has driven it for many different events
Florist- buy silks and make your own--much cheaper and they will save much better.
DJ- not sure

Your main concern should be catering. Everything thing else takes a back seat to catering. Your looking at a few thousand dollars for decent catering. Photographers are next line price wise, they can run anywhere from thousand dollar packages to 180 dollars an hour. I would find someone in your family who has some camera skills and put him to work.

Photographer- $300 (dad's friend)- he gave us a CD and we can take it where ever we want to make copies.
Videographer- didn't have one
Limo service- we rented a luxury car for the weekend for $75
Florist- $300- outdoor wedding so we only need bouqets, boutineers, and a couple of stems (daisies) for the centerpieces
DJ- $300- a steal in my opinion- he is a local DJ for a christian station and does event DJing on the side.

It depends on where you live and what kind of service you want. When I planned my wedding, I went to www.theknot.com, which is a great website dedicated to wedding planning. Find their budget tools. They have a neat little "calculator" that asks you how much money you have to spend, the number of guests you'll have, and the number of people in your bridal party. Then, it will calculate how much you should spend on each of the items you listed based on your budget and intended wedding size. Basically, it tell you what people who plan similar size weddings with a similar budget will spend on each of the items you're interested in.
