I cut up the potatoes and coat them on olive oil. I add whatever seasonings I feel like that day, and put them in a foil packet on the grill. Turn them over every 10 minutes or so and cook them for about 30-35 minutes. I like to use ranch dressing seasoning and parm. cheese together...that's really yummy!
----------
This is a recipe I use all year 'round...these potatoes are really really good and I always ALWAYS make a double batch...even for 2 people...the leftovers don't last too long!!
BBQ Scalloped Potatoes
2 cups thinly sliced peeled potatoes
1 cup thinly sliced carrots
1/2 cup water
1/2 cup KRAFT 100% Grated Parmesan Cheese
1/4 cup MIRACLE WHIP Light Dressing
2 Tbsp. chopped fresh parsley
1 Tbsp. KRAFT 100% Grated Parmesan Cheese
PREHEAT grill to medium heat. Place potatoes and carrots in microwaveable bowl. Add water; cover. Microwave on HIGH 5 to 7 min. or until potatoes are crisp-tender; drain well. Mix 1/2 cup Parmesan cheese and the dressing. Add to potato mixture; mix lightly.
SPOON onto center of 20-inch piece of heavy-duty foil sprayed with cooking spray. (Or, use a double layer of regular foil.) Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Place on upper shelf of grill. Cook 15 to 20 min. or until vegetables are tender. Open packet carefully.
SPRINKLE potato mixture with parsley and the 1 Tbsp. Parmesan cheese.
Use Your Oven
Assemble potato packets as directed. Bake at 350°F for 20 min. or until potatoes are tender.

Scrub potato skins well. Then slice them downward ALMOST all the way through the potato, but not quite, so that the slices all remain connected and fan out a little bit. Use a pastry brush to dab melted butter or olive oil (preferable) between all the slices, then salt (lightly) and pepper between the slices as well. Wrap in two layers of heavy duty foil and put on the grill for 45 minutes or so.
This works best with really good quality organic Red or Yukon Gold potatoes, but use the supermarket junk if you must. You can also add a little crushed garlic to your butter or olive oil if you wish. They're really tasty because the seasonings really cook into the potatoes, plus they are really pretty to serve!

I have found that the best way to grill a potato (like if you want a regular baked potato while you are grilling a steak, and just dont want to turn on the oven) is to take tin foil and make it into a little basket. You will put one tablespoon of water on the bottom and then make a few fork pokes in the potato. Place the potato in the tin foil basket then put GOBS of butter on top and fold the tin foil basket up so it seals everything together without entirely forming to everything inside. This will make a little cooking pouch. Then throw it on the grill. When it comes out it a butter flavored potato full cooked and ready with your steak.

Whole potatoes - poke several places with a fork, or slice in half. Put a little italian dressing over them. Wrap in foil and grill. Takes about an hour.
Cut up potatoes-I found these really nifty aluminum screens at the grocery store that just sit on top of the grill. Great for veggies, shrimp, scallops, anything that would fall through. Anyway, spice as you like and put on the screen, then grill till done.

I like to slice the potatoes, drop them, along with some butter, and some green, yellow and red peppers in some aluminum foil, season with your favorite seasoning, or just salt and pepper, seal the aluminum foil, and place near the outer edge of the grill. Using grill tools, "toss" the contents inside to distribute the butter and prevent burning - add more butter if needed. This will take around a half hour, just before pulling them off the grill, open it up, and add cheeses. Mmmmm - yummy!

Parboil first to pre-cook. For large potatoes, cut into even slices. Small ones can be cooked whole. Season with olive oil, salt, pepper and rosemary. When done, toss on the the next door neighbor's deck.

Slice them thin - they take awhile to cook, so thinner is better
Place in aluminum foil
Add butter and a little bit of water
For flavor add peppers, onions, salt
Wrap them up tight and grill
(one potatoe per wrap)
