When I make baked potatoes,I wash them, leave the skins on,bake potatoes until done in a baking dish, then smash them up a little, as to leave them still in chunks ,season with salt and pepper and butter. When ready to serve, cover potatoes with shredded cheddar cheese and bake until cheese is browned, remove them from the oven and cover with a layer of sour cream, finely chopped green onions and bacon bits,or fried bacon pieces.

I love a baked potatoes cooked the way you described. If I am serve a meal with a good baked potatoe, that is rather large for a portion, I take out the potatoe and eat just the peel. If I have a good salad, I don't need anything else.

Also to all of you who yearn to correct our spelling, potatoe...potato...potata...we don't care.

I heard that you can scoop out the potato , mash it up with some seasoning and put it back into the 'jacket' (skin) and cook it again. It is called a "twice baked potato" some one else here must really know how to do it right, the 2nd bake changes everything I guess. Thanks for reminding me to eat.

I cook mine the same way... I like to make mine like a pizza though... I know it may sound kinda strange but I add some pizza sauce, cheese, and all the toppings you'd find on a supreme pizza...

If you put a little water on the plate you are cooking on, you can cook them in the microwave without them drying out...works for me every time.
