Mac and Cheese "Toast" , Garlic Mashed Potatoes, Cornbread Stuffing, Cornbread, Cream of Mushroom & Green Beans, Potato Rolls

Mac and Cheese "Toast"

baked macaroni and cheese, refrigerated for at least overnight
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cayenne
1 egg beaten with 2 ounces water
1 cup panko bread crumbs
Oil for deep frying, preheated to 375 degrees

Cut refrigerated macaroni and cheese into slices or bite size pieces.
Season the flour with salt, pepper and cayenne. Dredge each piece through the flour and gently tap off excess. Dip in the egg wash and then coat with the bread crumbs. Allow them to rest for 5 minutes so the crust can set. Very carefully drop into the oil and fry until golden brown. Remove to a baking sheet fitted with a rack and rest for 2 minutes before serving.


Garlic Mashed Potatoes

7 cups peeled and cubed baking potatoes
6 cloves garlic, peeled
1/2 cup low-fat milk
1/4 cup Parmesan cheese, grated
2 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon pepper

Place potatoes and garlic in a saucepan. Cover with water; bring to a boil. Reduce heat. Simmer 20 minutes; drain. Place drained potatoes and garlic in a mixing bowl. Add remaining ingredients; beat with mixer until smooth. Serves 6 to 8.


Southern Cornbread Stuffing

Cornbread, recipe follows
7 slices oven-dried white bread
1 sleeve saltine crackers
8 tablespoons butter
2 cups celery, chopped
1 large onion, chopped
7 cups chicken stock
1 teaspoon salt
Freshly ground black pepper
1 teaspoon sage (optional)
1 tablespoon poultry seasoning (optional)
5 eggs, beaten

Preheat oven to 350 degrees F.
In a large bowl, combine crumbled cornbread, dried white bread slices, and saltines; set aside.
Melt the butter in a large skillet over medium heat. Add the celery and onion and cook until transparent, approximately 5 to 10 minutes. Pour the vegetable mixture over cornbread mixture. Add the stock, mix well, taste, and add salt, pepper to taste, sage, and poultry seasoning. Add beaten eggs and mix well. Reserve 2 heaping tablespoons of this mixture for the giblet gravy. Pour mixture into a greased pan and bake until dressing is cooked through, about 45 minutes. Serve with turkey as a side dish.

Cornbread
-----------------------------
1 cup self-rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs
2 tablespoons vegetable oil

Preheat oven to 350 degrees F.
Combine all ingredients and mix well. Pour batter into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.
To serve, cut into desired squares and serve with butter.
Yield: 6 to 8 servings


Cream of Mushroom & Green Beans

6 cans of green beans
4-6 stripes of bacon
1/2 cup fresh onion chopped
6 cans of cream of mushroom soup
mix all ingredients together and pour into a casserole dish, bake in over at 425 degrees for 45 mins, top lawry's with fried onions and bake for 5 mins.

I cut sweet potatoes into wedges with the skin still on.Marinate in Italian salad dressing for an hour.Grill until cooked through and grill marks are
on both sides.Season immediately with fresh ground black pepper.

1 can kidney beans
4-6 stripes of bacon
1/2 cup fresh onion chopped
1/2 cup sugar

add all ingredients into a big heavy pot,, bring to boil and simmer for an hour or two,, until liquid starts to thicken,,

mashed potatoes, gravy, potato salad, boiled cabbage, green beans, and black eyed peas. I make some of the above along with Rhodes frozen rolls that rise. YUM!
