Most any action movie would be a good test for home theater.
Movies like Eraser, The Incredibles, Master and Commander, Speed, Waterworld, Braveheart, Harry Potter, Lord of the Rings, Star Wars, etc.

Test for what?

If you mean as a demo disk, Blade Runner (Superbit version) is often used by professional reviewers .. for the picture.

For sound any of the three "Lord of the Rings" pictures (in the higher end editions with DTS 6.1 sound) would be a good choice. Or "Pirates of the Caribeen", or "Saving Private Ryan".

If you mean to test a system technically (and calibrate it) one choice would be "Digital Video Essentials" (See link), or a "free" tool is available on THX DVDs (such as "Star Wars III").

Color: Finding Nemo (very beginning of scene 25 will also great for testing your sub-woofer)
Low light/contrast: The Fog (remake of the 70's version)
Sound: Lord of the Rings 1,2, or 3, or Star Wars 1,2, or 3 (I believe Star Wars 3 was recorded in 7.1)

Try Top Gun, it's the most high performance DVD of the home theater series before the whole thing blew up.

I really hate to say this but.........Top Gun does a nice job, there is a lot of side to side action so you get the impression of actually being in the scene and a couple of times when, (if your balance is set correctly), a jet comes from behind you over your head. Sorta neat!
