This is super easy to make and really delicious..a family favorite!
INGREDIENTS:
1/4 cup margarine
2 pounds cubed beef stew meat
1/4 cup all-purpose flour
1 (14 ounce) can beef broth
1 cup beer
1 onion, sliced into thin rings
2 cloves garlic, minced
1 tablespoon packed brown sugar
1 teaspoon dried thyme
1 bay leaf
1 (15 ounce) can mixed vegetables, drained

DIRECTIONS:
Preheat oven to 350 degrees (175 C).
In Dutch oven over medium-high heat, melt butter or margarine. Cook beef in two batches until browned, stirring often. Remove beef from Dutch oven and set aside. Stir in flour.
Add broth, beer, onion, garlic, brown sugar, thyme and bay leaf. Heat to boil. Return beef to dish. Cover and bake at 350 degree F(175 C) for 1 1/2 hours.
Add mixed vegetables. Cover and bake for 1 hour, or until beef is done. Remove bay leaf and serve.
You can prepare in a crock pot.

I've used the seasoning packets, too, but if you don't have any you can add in garlic salt, thyme, parsley flakes, onion powder, pepper, - none of my stews have tasted the same twice because I dont measure and don't use the same ingredients twice but they usually are really good. I like to add in red cooking wine.
When you brown the meat - cover it with flour first and add seasoning in the flour including meat tenderizer. Then put it in hot oil to fry. I have also browned and then baked the meat slowly to have it more tender (I put it in one of those cooking bags). In the stew part - I like to use fresh carrots and potatoes and onions and celery.
You can add some left-over vegetables you might have. (be careful with this one because one time I added in some cut up vegetables left over from a party and there was one hidden pickle in it. And my husband bit into it - and it was the first meal I had ever made him and I have never ever heard the end of that and it's been a long 18 years!! lol)
You can add in cans of corn. I like to add in a can of crushed red tomatoes for the flavor and the juice of it. Also to make it spicier, my husband likes me to put in a can of Rotel tomatoes. I have tasted stew that had shredded cabbage in it and it was delicious. The great thing about the stew is that you can add seasonings as you go to make it taste the way you want.
You can add all sorts of stuff to a stew and it will taste different but will still be good. But not pickles. :(

Salt, pepper, onions, carrots, potatoes some people like celery in it.
3 lb Cubed stew beef
1/4 c Butter
1 ea Medium chopped onion
1 cn Tomato (8-oz)
2 ea Cloves minced garlic
6 ea Carrots cut in half
2 ea Stalks celery(chopped)
6 ea Potato (peeled & halved)
10 ea Small pearl onion
2 tb Parsley
1/8 ts Ground thyme
1 1/2 ts Salt
1/2 ts Pepper
1/4 c Flour
2 ea Cubes beef bouillon
3 c Water
1 c Red Wine
Lightly salt and pepper beef cubes and coat with
flour. In hot skillet, saute' with butter floured beef
cubes until lightly browned. In a heavy pot saute'
onions until clear. Add meat, can of whole tomatoes,3
cups water*, bouillon, garlic, and parsley, thyme,
salt and pepper. Add 1 cup of red wine if available.
Cover, simmer 1 1/2 hours. Then add carrots, celery,
potatoes and small onions. Cook until tender, about 1
hour.

Being single, I have found the easiest way to have a nice pot of beef stew is to buy the Dinty Moore brand of beef stew (in the can) and add a pound or two of browned hamburger. Easy and tasty. Minimum work.

2 lb. beef for stew, cut into 1-inch cubes
2 cups beef broth
2 cups diagonally sliced carrots
2 cups diagonally sliced celery
2 cups quartered onions
2 cups cubed peeled potatoes
2 Tbsp. MINUTE Tapioca
1/4 tsp. ground marjoram
1/4 tsp. pepper
1/4 tsp. ground thyme
1 bay leaf
PREHEAT oven to 300°F. Mix all ingredients in large casserole dish; cover.
BAKE 2-1/2 to 3 hours or until meat and vegetables are tender, stirring after each hour.
REMOVE and discard bay leaf.

sounds like you have some great homemade ideas and suggestions,, I will also add there are some great frozen meal starters too some come with sauces and some just come with the veggies, look around you can find some good faster things.

Lipton's onion soup mix is good. Or keep it simple and use only salt and pepper then fresh vegetables: onion, potato and carrot. Thicken with flour and water, use blender and no lumps.

buy the prepackaged ones at the store...they are about 35 to 50 cents and make 3 cups of broth....mostly corn starch
