Italian Style Stuffed Peppers

Ingredients :

6 x small bell peppers
1/2 lb bulk Italian sausage
1/2 lb ground chuck
1 tsp. salt & pepper
1/2 cup Italian bread crumbs
1/4 cup grated parmesan cheese
1 x egg
Mix all ingredients together. Stuff peppers and then place in a casserole dish.
GARLIC SAUCE:
1 can Del Monte Italian Style Stewed Tomatoes
1 tsp basil
1/2 tsp sugar
1/2 tsp hot pepper flakes
5 x 7 cloves of garlic, minced
1/4 cup olive oil
GARLIC SAUCE:
Pour Stewed tomatoes in blender. Add basil, sugar and hot pepper flakes.
Puree for 2 seconds. (just enough to make smooth.)
Saute' garlic in oil. Pour in tomatoes and let simmer for about 20 minutes.
Pour sauce over stuffed peppers. Cover and bake in 350 oven for 30 minutes or until peppers are done to your liking.... Serve sauce over ziti or spaghetti.

* 4 large green bell peppers
* 1 to 1 1/2 pounds lean ground beef
* 2 tablespoons chopped onions
* 1/2 teaspoon seasoned or regular salt
* 1/4 teaspoon Pepper
* 1 can (12 to 14 ounces) whole kernel corn, drained
* 1 1/2 cups cooked rice
* 1 can (8 ounces) tomato sauce

PREPARATION:
Directions for Stuffed Peppers
Cut tops off peppers; remove seeds and membranes. Cook peppers in simmering water to cover for 10 to 15 minutes. Brown ground beef and onions; pour off excess grease.

Add seasonings, rice, corn, and tomato sauce. Heat until hot and bubbly. Spoon filling into peppers; place in casserole dish. Place extra filling, if any, around stuffed peppers. Bake stuffed peppers at 350° for 20 minutes.
Recipe for stuffed peppers serves 4.

Try mushrooms and onions gently fried in a pan then add creme freche when mushrooms are wilted. Add 1 tablespoon of paprika (per portion/pepper) and a pinch of cayenne pepper. Put in peppers and top with a little cheese. It's delish...

Try chilli con carne. Cook the chilli and then cut off top of pepper scoup out all the seeds etc. Fill pepper with chilli and put top back on. Put in oven till pepper starts to shrivel. Take out and eat with salad

you take your big pepper and put in it
if you are making a veg disk only. tomatoes,cheese with red onions
if you want to add meat then rice with beef pieces in Gravy
There are a lot of recipe using peppers.

why not try some nutty brown rice and cream, or a good smoked cheese and leek compote. if you want to go down the seafood road try out salmon mousse with cream, chives and garlic. Another good one is lambs mince spiced either indian or north african style.

I made a really good one the other week - it was feta cheese and red onion mixed in with scrambled egg. V nice.
