I don't know if it's safe to cook with them. I have 2 kids and don't know how bad they are for your health. What the heck are they made of?

I wouldn't eat too many of those. I would guess that they pretty much all have high concentrations of MSG which is bad for several reasons. Personally I avoid it like the chickenpox. DIfferent people have different levels of sensitivity to MSG and also different reactions to it. The FDA considers it safe as a food additive, but some research indicates untoward effects. (check the Wikipedia link and scroll down for more info on MSG excitotoxicity and ingredient listing on food)

Wikipedia has, "It is made by dehydrating vegetables, meat stock, a small portion of solid fat (such as hydrogenated oil), and seasonings (usually including salt and monosodium glutamate) and shaping them into a small cube."

They are ok to use, but the sodium(salt) content is very high. They are made from chicken stock reduced to a thick paste(good ones are). Then packaged.

FOODS AND HERBS TO AVOID WITH HIGH BLOOD PRESSURE

Avoid salt, animal fats, alcohol, caffeine and tobacco.
Avoid bacon, beef, bouillons, chicken liver, corned beef, dairy products, gravies, pork sausage, and smoked or processed meats. It is alright to eat moderate amounts only of broiled white fish and skinless turkey or chicken
Avoid MSG, Accent, baking soda, canned vegetables, commercially prepared foods, toothpastes containing saccharin or baking soda, diet soft drinks, foods with mold inhibitors, preservatives and sugar substitutes, meat tenderizers, softened water and soy sauce.
Avoid foods such as aged cheeses, aged meats, anchovies, avocados, chocolate, fava beans, picketed herring sour cream, sherry wine and yogurt.
According to Julian Whitaker, MD, excess intake of sugar and refined carbohydrates has been demonstrated to promote sodium retention which increases blood volume and in turn raises blood pressure.
According to Andrew Weil a number of herbal remedies can increase blood pressure and should be avoided by hypertensives. Licorice root contains a compound called glycyrrhizin that can cause sodium and fluid retention and can raise blood pressure. (It is safe to use deglycyrrhizinated licorice extract, or DGL, which contains no glycyrrhizin). The stimulant herbs ephedra, guarana, kola nut, yerba maté, and yohimbe can also increase blood pressure. Plus, Asian ginseng and eleuthero (Siberian) ginseng may raise blood pressure, so people with hypertension should use them with caution. (Weil, 2003)

Basically chicken fat and salt.

They're very high in sodium, so if you're on a sodium restricted diet they're bad for you, but if you're basically healthy, no problem.
