2 pounds russet potatoes, peeled and cut into 1 1/2-inch pieces

2 teaspoons salt, or to taste

4 tablespoons unsalted butter

1/3 to 1/2 cup hot milk, half-and-half, or cream

Freshly ground pepper, to taste

1. In a large saucepan, combine the potatoes with cold water to cover them. Add the salt. Bring to a boil and lower the heat. Simmer briskly, uncovered, for 20 to 25 minutes or until the potatoes are tender.

2. Drain the potatoes and return them to the pan. Over low heat, shake the potatoes in the pan to dry them out. Remove the pan from the heat.

3. Mash them with a potato masher. With a wooden spoon, beat in the butter a little at a time, followed by the milk, half-and-half, or cream. Add pepper and taste for seasoning.

4. Let the potatoes stand, covered, for about 3 to 4 minutes to mellow before serving.

Roast Garlic Mashed Potatoes:
3 heads of garlic, top 1/2-inch cut away
3 tablespoons olive oil
Salt
Freshly ground black pepper
2 pounds baking potatoes, like russets or Yukon Gold potatoes, peeled and cut into 1-inch cubes
1 stick unsalted butter, at room temperature
3/4 cup heavy cream

Preheat the oven to 375 degrees F.

Place the garlic on a pie pan and drizzle with the oil. Season lightly with salt and pepper, and roast for until the garlic is very tender and golden brown, about 1 hour. Remove from the oven and let cool. When cool enough to handle, squeeze the head to release the cloves into a small bowl. Use a fork to mash the garlic until smooth.

Place the potatoes and 1 teaspoon of salt in a medium pot and cover with water by 1-inch. Bring to a boil. Reduce the heat to a simmer and cook until fork tender, about 15 minutes. Drain in a colander. Return to the saucepan over medium heat and cook 1 minute. Reduce the heat to low, add the mashed garlic and butter, and mash using a hand-held masher. Add the cream and continue to mash until thoroughly combined and the desired consistency is reached. Season, to taste, with salt and pepper, and serve immediately. 6 servings

The BEST mashed potatoes are cooked with large pieces of potato, or better yet, whole potatoes (peel before or after boiling); the reason is that larger pieces of potato absorb less water. Cook until softened, but not to the point of falling apart.

Then drain WELL, add butter and half&half, Use hand mixer until as smooth and creamy as you want. Bunches of calories, but very good. Salt to taste.

Boil the potatoes with several heads of garlic and then discard the garlic before mashing or ricing. Then, of course, butter, milk, salt, pepper, and perhaps a bit of sour cream or buttermilk. Of course, some grated cheddar cheese can add a wonderful flavor as well.

My grandma makes the best mashed potatoes. Use the little red potatoes but don't peel them. Yea you will have the peel in them but they are so good. Use milk, butter, salt, and pepper (anything else you would like too) and they are so good. Now I want some LOL.
