This is a method of serving fish or meats in a highly spiced and seasoned sauce. What ever you use for a sandwich needs to be chopped finely and then mixed with a suitable sauce to create a a thick filling:
try hard-boiled eggs with mayo and a touch of curry powder. With ham you would use the same mixture. If you wanted to toast the sandwich then add some grated cheese to the mix.
Try this recipe for devilled chicken legs/wings. Season the legs/wings with pepper and salt. Coat them with a little mustard [wet] and a dust of cayenne.Press them into breadcrumbs to form a coating and then fry them in butter to which a little worcestershire sauce has been added. Drain on kitchen paper and serve with a green salad. Makes a great lunch dish served with a reisling or a sauvignon blanc.
