i know that most margarine is dairy free, but what is it made from?
and raisins and sultanas have slight differences in colour, but are they different kinds of grapes or something?

Margarine is made from vegetable oil, butter from milk. Raisins and sultanas are different types of grape.

Butter - Saturated Fats and Cholesterol
Butter, as an animal fat, contains both saturated fats and cholesterol - the two dietary ingredients that give rise to our blood cholesterol. Saturated fats, mainly found in animal products, can raise LDL cholesterol (the bad cholesterol), thus also raising total blood cholesterol as well. Cholesterol, on the other hand, has little effect on blood cholesterol in most people. But for some, even a little dietary cholesterol can cause a soar in blood cholesterol levels.

Margarine - Trans Fats (.....in the past)
When margarine was first introduced into the market place, it was loaded with trans fats. Hydrogenation "solidifies" liquid vegetable oil into a spread so it is easier to use. As a result of this hydrogenation process, trans fats are produced. Similar to saturated fats, trans fats also increase LDL cholesterol (the Bad cholesterol) and lower HDL cholesterol (the Good cholesterol).
In recent years, food manufacturers and the general public began to realize the negative health effects of trans fats. Another type of margarine is now widely available - non-hydrogenated margarine. This type of margarine contains no trans fat and is softer than the first-generation margarine stick. Instead of hydrogenating the liquid vegetable oil, manufacturers now add a tiny amount of modified palm and palm kernel oil to enhance spreadibility of margarine. By doing that, soft margarine can be trans fatty acid free

Raisins and sultanas are dried grapes, drying may take place in the sun or by mechanical means. Like other dried fruit, raisins and sultanas are a concentrated source of calories, sugar, and nutrients. They supply a healthy amount of dietary fiber (both soluble and insoluble), as well as some iron, potassium, and B vitamins.

Sultana raisins were originally the product of the Sultana grape, which grew in Turkey. But in this country, 95% of the grapes used for raisin production are the Thompson Seedless variety, which dry and darken in the sunlight, producing the common raisin. The same variety of grape, however, treated with sulphur dioxide and heated artificially stays lighter, moister, and plumper, and these are what are sold here as golden raisins or sultanas. Theoretically, sultanas are sweeter and less acid than other raisins.

Margarine is made from plant fat, butter is animal fat ie milk to cream = butter.
Raisins are the red grapes and sultanas are the white/green ones.

Marg is like tastless plastic but butter is creamy and nice. Sultanas are a better texture and have better flavour as where raisins are like little bits of dried cardboard.

Margarine is only one molecule different than the make up of plastic. Imagine that in your arteries!! :(
It's always best to use natural ingredients. Just remember, moderation!

As for sultans.. I have no clue.

In the event it's a fruit they have seeds, otherwise it's a vegetable. And vegetables are usually grown in the ground while fruits are grown in trees.
