Two Places primarily:
click start
click run
type in "msconfig"
click ok
click on the startup tab
uncheck ones you don't want starting, or delete those programs from the system using add/remove in the control panel

also in the registry *don't mess with this if you don't know how, you've been warned*
click start
click run
type in "regedit"
click ok
navigate to HKEY_LOCAL_MACHINE/Software/Microsoft/Windows/Current Version
Take a look in Run, RunOnce, Runsvcs wipe out keys calling on programs you don't want to start.

Right click 'My Computer' then left click 'Manage', then left click 'Services and Applications', then left click 'Services' this will show every service that is in your start-up menu and gives you the option of starting each one manually, automatically or disabling it altogether. This list also tells you what programs depend on this service and the consequences of disabling it.

Just be careful what you do, record what you cahange so if it doesn't reboot properly, or something doesn't work, you can change it back.
