BBQ Chicken Pizza:

We love the contrast of flavors provided by sweet tomato chutney, savory chicken, and sharp cheddar cheese.

1 (10-ounce) Italian cheese-flavored thin pizza crust (such as Boboli)
3/4 cup tomato chutney
2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
2/3 cup diced plum tomato
3/4 cup (3 ounces) shredded extra-sharp white cheddar cheese
1/3 cup chopped green onions

Preheat oven to 450°.

Place crust on a baking sheet. Bake at 450° for 3 minutes. Remove from oven; spread chutney over crust, leaving a 1/2-inch border.

Top chutney with chicken. Sprinkle diced tomato, cheese, and green onions evenly over chicken. Bake at 450° for 9 minutes or until cheese melts. Cut pizza into 6 wedges.

Note: If you can't find tomato chutney, make your own. Combine 2 cups diced plum tomato, 3 tablespoons brown sugar, 3 tablespoons cider vinegar, 1/8 teaspoon Jamaicañ jerk seasoning, and 1 minced garlic clove in a small saucepan; bring to a boil. Reduce heat to medium; cook 20 minutes or untril thickened.

Yield: 6 servings (serving size: 1 wedge)

Pizza dough:
1 pkg active dry yeast
1 TBS sugar
1 c warm water
3 c flour
1/4 tsp salt
1 tsp oo
vegetable cooking spray
1 TBS yellow cornmeal

Combine first 3 ingredients and let sit 5 min. Combine yeast mixture, 2 3/4 c flour, salt and oil in a large bowl, stirring to form a soft dough. Turn dough onto a lightly floured surface. Knead until smooth and elastic @5 min; add remaining flour, 1 TBS at a time, to keep dough from sticking to hands. Place in greased bowl, turning to coat. Cover and let rise in draft free place for 1 hour or so until doubled. Punch down dough and divide in half. Roll each half to a 12 inch circle Spray 2 pans and sprinkle with cornmeal. Place dough pan and press out with fingers to form rim. Cover and let rise 30 minutes.

Top with your favorite pizza sauce, whatever toppings you choose (pepperoni, sausage, mushrooms, peppers, onions, etc...) and then mozzarella cheese.
After topping, bake at 500 10-12 min.

u know what an easier and tastier pizza??? instead of making pizza dough, just use pita bread. u could fill the inside of the pita bread with cheese then on top add some tomato sauce, cheese, any toppings u like. pop in the oven or even toaster oven until the pita bread is crispy..... yummm....

start with an easy crust' instant or pre made will do. you can buy a sauce or start with can of tomato sauce. heat on low. add a bit of basil,oregano and parsley. A pinch of sugar to cut the acid. Once you have mixed it with you sauce spread it evenly over the crust. You can add about any thing you want for topping and then add cheese. I like a mixture of different cheeses. Bake at 450 for 20 mins. or until golden brown.
