Sweet Potato In Oven

If you want a soft peel on the outside of the cooked sweet potato go ahead and wrap it in foil after you've smeared olive oil on its freshly washed surface. But half the fun (and vitamins) is eating the skin, too. Pierce the potato or it might explode.

Please do NOT use plastic wrap over ANY food that you are going to microwave because of the toxic materials that are released from the plastic wrap when it is heated. Also, those fumes get into the kitchen and that's no fun.

I like to top off my sweet potato with butter, celery seeds, a sprinkle of dill, a dash of garlic salt and...chunky blue cheese dressing! Now that's a meal in itself on a cool evening. That's a really good combo when you add a nice grilled rib eye steak...
yummy in the tummy.

Enjoy!

First of all. it is far better to cook your Sweet Potato without the aluminum foil. Wrapping it would cause the potato to steam cook. Without the foil, you would achieve a true baked status where the natural sugars in the tuber are allowed to caramelize. This process gives a much better flavor, almost candy like and with a slight nutty flavor.
The potato should be cooked at 350 degree F. until fork tender. it is difficult to give an exact length of time as Sweet potatoes come in various sizes.
They are best eaten with equal quantity of Butter and Sour Cream.

I put my sweet potatoes in a deep pan with 1/2 cup water and cover the pan with foil and cook at 350 for an hour. Of course I'm from the South so we peel them after they are cooked then I then mash them add butter, milk, brown sugar and a little pancake syrup. YUMMY!

the best way is to first wash the whole sweet potato's with peal in cold water. It is best too soak the potatos is a solution of water, cinnamon, nutmeg, and sugar overnight. Get a appropriate size oven pan for the oven. Put approximately one cup of water, three tbsp. butter, and one quarter cup of soaking solution in oven pan. Place potatos in pan. Cover with aluminum foil. Bake on 325 degrees for approx. one hour or until potatoes are tender. Let me know how it goes.

Or you can placed soaked potatoes in aluminum foil . Place about one tablespoon of butter in aluminum foil with potatoe. Wrap tight at end but loosely, leaving space for the potatoe to cook in own juices.

For a sweet potato, just cover it in butter(or marg.) set it on the rack for 1 hour@400 degree oven. Don't wrap it in foil. But you might put foil under it to keep the juice from getting burned in the bottom of your oven.
