we are having a cookie swap at work thursday. any ideas?

that's a cute answer but, does anyone have an easy recipe they can share? thanks!

Easiest and yummiest recipe ever. Saltine Toffee.
-Preheat oven to 350
-Line a cookie(jelly roll) pan with foil.
-Lay a flat layer of saltines accross the entire thing.
-Melt 1 cup light brown sugar and 1 cup butter until its well blended and begins to create a foam.
-Pour mixture over saltines
-Bake for 10 mins
-Remove from oven and top with a bag of chocolate chips
-Let them melt just a little and spread. Top with your favorite nuts or candy. Pecans or walnuts are good. Crushed peppermints are nice at the holidays.
-Freeze until solid (few hours)
-Remove from pan and drop on pan a few times to create random toffee pieces. Break large chunks into smaller ones.

This was a huge favorite at the last cookie swap I went to. Good luck!

Monster Cookies Recipe


The monster cookies recipe is so popular because it combines four great ingredients; peanut butter, oats, chocolate chips, and M&M’s!
Ingredients
1 stick (1/2 cup) salted butter, softened
1 cup plus 2 tablespoons packed brown sugar
1 cup granulated sugar
3 eggs
3/4 teaspoon light corn syrup
1/4 teaspoon vanilla extract
1/4 teaspoon salt
2 teaspoons baking soda
1 cup semi-sweet chocolate chips
2 cups peanut butter
4 1/2 cups old fashion oats
1 cup M&M’s candies

Hardware
Large bowl
Cookie sheets
Mixer

Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease cookie sheets; set aside.
Step 3: In a large bowl, cream together the butter and both sugars with an electric mixer set on medium-high for 30 seconds.
Step 4: Add eggs, peanut butter, corn syrup, and vanilla extract; beat well.
Step 5: Add oats, baking soda, and salt; stir well.
Step 6: Stir in remaining ingredients (dough will be stiff).
Step 7: Pack dough into 1/4 cup measure. Drop 4 inches part onto prepared cookie sheets. Lightly press each cookie into a 3 1/2–inch circle.
Step 8: Bake for 12-15 minutes (center of cookies will be slightly soft). Let set for 1 minute and then transfer cookies to a cooling surface.

Makes 30 cookies

Honey Lace Cookies

Unsalted Butter- 2 tablespoons
Light Brown Sugar- 2 tablespoons
Honey- 1 ½ tablespoons
All Purpose Flour- 2 tablespoons
A Pinch of Salt

1. Preheat the oven to 375° Fahrenheit.

2 Line a baking sheet with 2 layers of parchment paper.

3. In a small saucepan, melt butter, sugar, and honey. Transfer to a bowl.

4. Whisk in sifted flour and salt until smooth.

5. Working quickly, drop ½ a teaspoon of batter onto the baking sheet. Make sure the spoonfuls are at least 3 inches apart.

6. Bake until cookies are spread out and golden brown.

7. Cool for 3 min. or until you can lift the cookies without ripping them. (They will be soft)
Let them cool completely on a flat surface for flat cookies or lay them gently on a curved surface such as a tiny bowl or rolling pin. They will harden, but still be delicate

8. For Honey Lace Toffee, do not space when baking. After taking cookie out of the oven, mound it together and cool in a block. Slice or break when completely cool.

Super Soft Chocolate Chip Cookies

•4 1/2 cups all-purpose flour
•2 teaspoons baking soda
•2 cups butter, softened
•1 1/2 cups packed brown sugar
•1/2 cup white sugar
•2 (3.4 ounce) packages instant vanilla pudding mix
•4 eggs
•2 teaspoons vanilla extract
•4 cups semisweet chocolate chips
•2 cups chopped walnuts (optional)

1.Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
2.In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
3.Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

Combine flour, soda, and salt in a small bowl; gradually add to butter mixture, beating well. Stir in morsels, toffee bits, and almonds. Drop by tablespoonfuls onto lightly greased baking sheets.

Bake at 350° for 8 to 14 minutes or until desired degree of doneness. Remove to wire racks to cool completely.

Yield: Makes about 5 dozen

I make what I call "kitchen sink cookies." I buy already prepared Betty Crocker PB cookie mix. All you add is eggs and oil. I put a combo of any or all of the following:

Chocolate chunks
walnuts/peanuts
coconut
raisins
diced up soft caramels or toffee chips

They are great and no one will know they are not home-made. FYI: If you do the soft caramels use parchment paper so they do not stick.

i will say this, i make lots of cookies, especially during the holiday season, but one of my alltime favorites that will be easy for you to find is on the craisins bag. craisins are dried cranberries, and the cookies are fantastic, not to mention easy to make. gl!
