especially on the strict diet. i dont know where to start. it seems there are so many foods to avoid that i can only drink water. its a little overwhelming and would appreciate any tips on whats the best way to find filling foods

Stay away from gluten. I'm sure there are gluten-free substitutes in your local supermarkets. Also, rice, potatoes and corn are gluten free, so you can use those to replace your breads and pasta.
I've included a link below, it extensively covers c(o)eliac disease. It takes a while to adjust your diet, but in the meantime, keep your fruit and veggie intake as high as possible, you will need the vitamins and minerals.

It is a real challenge to stay away from gluten since it is so common. There are support groups that help you to deal with this. You may want to investigate this route.
